April 2022 Newsletter
We would like to thank our Good Samaritan Volunteers for your many contributions and precious time given to Good Samaritan over the years. We could not have provided this level of care to our community without you and your support. Over the past 20 years more than 800 people have donated their time and expertise to our community. In 2021 alone our volunteers served over 2,541 documented hours!

If you are interested in a volunteer position, the positions below are currently available. We also have a “Special Assignments Pool”. This pool of volunteers will be called upon when we have community events or need help for special events.

Slow Cooker Thai Chicken Soup
Using pre-cut vegetables makes the prep time go faster for the recipe. Put the ingredients in the slow cooker then set it and forget it until dinnertime. See the video below for step by step instructions.
Ingredients
  • 2 pounds boneless, skinless chicken breasts, all visible fat discarded (aim for 2 1-pound chicken breasts)
  • 1 pound button mushrooms, sliced
  • 14.4 ounces frozen onion-and-pepper stir-fry mix
  • 4 cups fat-free, low-sodium chicken broth
  • 1/2 13.5-ounce can of lite coconut milk
  • 10 ounces frozen green peas
  • 4 ounces dried medium Asian rice stick noodles broken in half
  • OR 4 ounces vermicelli brown rice noodles, broken in half
  • 1/2 cup fresh basil leaves, chopped
  • OR 1/2 cup fresh cilantro leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper (freshly ground preferred)
  • Asian hot sauce, such as Sriracha, to taste (optional)
Directions
  1. Put the chicken in a 5 to 7-quart slow cooker. Spread the mushrooms and stir-fry mix over the chicken. Pour the broth and coconut milk over all. Cook, covered, on high heat for 4 hours or on low heat for 8 hours, or until the chicken is tender and no longer pink in the center.
  2. Using tongs, transfer the chicken to a cutting board. Quickly stir in the peas, noodles (make sure the noodles are mostly submerged in the liquid), basil, lime juice, red pepper flakes, salt, and pepper. Re-cover the slow cooker. If using the low setting, change it to high. Cook, covered for 20 minutes, or until the noodles have softened.
  3. Meanwhile, carefully cut the chicken into bite-size pieces. When the soup has finished cooking, stir in the chicken. Ladle the soup into bowls. Serve with the hot sauce.

Good Samaritan had the opportunity to attend the Pickens Junior High School Health Fair. During this fair students are screened for scoliosis and non-profits and businesses also have the opportunity to share their services and educate the kids on healthy habits. Good Samaritan took this opportunity to show the 7th and 8th grade students our Telehealth equipment. This equipment utilizes technology to allow a practitioner to examine a patient from a remote location. It uses cameras and connects wirelessly to medical equipment such as stethoscopes. The image is crystal clear and can allow physicians to see tiny areas on a larger screen. This can allow for an even more comprehensive exam
We set up a monitor so that students could see the inside of their own ears, a close up view of their skin, or even down their own throats. Kristin Peters, one of Good Samaritan's Nurse Practitioners was able to show the students exactly what a practitioner looks for in a healthy ear or even down a healthy throat. She said that it would be hard for her to go back to a regular otoscope after having the opportunity to play with the amazing equipment.

Looking inside each other's ears was a hit with the teenagers. They were amazed, and sometimes a bit grossed out, by seeing the inner workings of their body. We were also able to pass out toothbrushes, toothpaste, hand sanitizer, snacks, and many more things to encourage students to build healthy habits.
