In last week’s newsletter, I promised a recipe for the green chorizo I came across in Mexico City, which made for gorgeous street tacos. Sadly, after a culinary development session over the weekend, the recipe I used didn’t come out quite right. The taste was spot-on, but it just wasn’t… green, which means it was more of a production error than a bad recipe. I’ll work on that process and get a recipe to you as soon as I can. (If you can’t wait, give this one a try, though it won’t come out vibrantly green either.)
When you combine my kitchen error with a last-minute call-out from this week’s featured vendor, it was looking like we’d have a light newsletter, so I pinged my office mates for ideas. Thankfully, Tourism Manager Pam King came to the rescue with a Dip recipe she made over the weekend for football-watchin’.
Now, this recipe is the furthest thing from farmers-market-friendly we’ve ever run, but from all reports, it’s apparently very family-and-friend-friendly. Pam’s from Wisconsin, where the growing season is about two weeks in July. But where they don’t have year-round fresh veggies, they more than make up for it with cheese… and beer. So while it doesn’t feature any of our meat and veggie vendors, according to Pam, it will get gobbled up by everyone.

Did You Know?
Bob hosts an open mic at Dos Olivos markets in the area. You can catch him on the first Thursday of the month in Wimberley (that's this week!) and the third Wednesday of each month in Belterra. Even better, pick up your guitar and take the stage! Sign-ups start at 5:30 and the event runs 6-9. Make sure to follow Bob on Facebook to keep up with his events.

Wisconsin-Style Beer Dip
Ingredients:
- 2 (8 ounce) packages cream cheese, softened
- 1 (1 ounce) package ranch dressing mix
- 2 cups shredded Cheddar cheese
- ⅓ cup beer
- 1 bag mini pretzels or pretzel sticks
Directions:
- In a medium bowl, combine cream cheese and dressing mix. Stir in Cheddar cheese, and then beer. The mixture will appear mushy. Cover bowl, and refrigerate for at least 3 hours, overnight if possible. Serve with pretzels and enjoy!!
If you’re looking to support a vendor with this recipe, you can always roast and dice some chilies to add, and sometimes Flour Power will bring fresh-baked pretzels that would be perfect for dipping. A good sourdough or focaccia will also do the trick nicely. Enjoy!
