RAINBOW TROUT

Cousin to the regular rainbow trout, this is a delightful alternative that is so tasty and easy to cook - and we'll take the bones out for you.
     My favorite simple preparation: 
Pecan-crusted Ruby Red Rainbow Trout
Ingredients:
6-8 oz. trout per person
2-3 oz. pecan halves
olive oil
Directions:
Pre-heat oven to 400 degrees
Process nuts in a blender or food processor until uniformly small pieces.
Rinse fish under cold water, pat dry. Rub with olive oil and place on oiled broiler pan. Spread nuts evenly over the fish fillets, pressing lightly so they adhere to the fish. Bake for about 10-12 minutes, checking occasionally to see that the nuts aren't getting burned.
Serve with a slice of lemon or a drizzle of our Lemon Dill Sauce.

Burgers:
 We will have fresh salmon burgers and possibly some fresh tuna burgers, easy to grill and great on a bun. 
Fish for Grilling:
 The types of fish that are best for grilling are the thicker, meatier fish, such as halibut, tuna, marlin, swordfish, salmon, mahi mahi, sea bass, plus shrimp and scallops - ask us for suggestions. Fish cooks quickly, so less time standing in front of the grill!
Sides:
Rice Pilaf, Wild Rice with Dried Cherries, Calico Couscous, Herb Roasted Potatoes, Potato Salad, Broccoli Salad & more -

     In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess:
