Persimmons are around for a short time (just a couple of months), so enjoy them while you can. Don't confuse Fuyus with the Hachiya persimmon, which is known for its baking applications. You can bake with Fuyus, but they are best eaten raw. Enjoy them like you would an apple. You can use them in your fall salads - put them atop arugula with some pomegranate seeds, walnuts and goat cheese. If you have a dehydrator and would like to savor them longer, slice the persimmons thinly and dehydrate.
