Striped Bass With Potatoes & Olives
|
|
Ingredients:
- ¼ cup olive oil
- 2 pounds large Yukon Gold potatoes, peeled and sliced 1/8-inch thick
- Sea salt
- Ground black pepper
- 2 pounds wild striped bass fillet, with skin (1 to 2 fillets)
- 1 cup pitted picholine olives
- 8 bay leaves
- 2 lemons, in thin wedges

Directions:
- Heat oven to 425 degrees. Use a little oil to brush the bottom of a shallow baking dish that can go to the table and is large enough to hold the fish in one piece. Spread potatoes in dish, overlapping, and sprinkle with 2 tablespoons oil. Season with salt and pepper. Bake 20 minutes. Remove from oven.
- Season flesh side of fish with salt and pepper. Place fish skin side up on the potatoes, sprinkle on remaining oil, scatter olives around and place bay leaves on top. Cover with parchment paper and bake 20 minutes, or until fish is just cooked through at the thickest part (a sharp knife will penetrate easily). Garnish with lemon and serve.

Fish Tacos With
Avocado Cilantro Sauce
|
|
Ingredients:
- 1.5 lbs Black Drum fillets
- 1 ½ teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon brown sugar
- 1/4 teaspoon cayenne pepper
- 2 tablespoons canola oil
- 12 corn tortillas
FOR THE SLAW:
- ½ red cabbage, sliced thin
- ¼ green cabbage, sliced thin
- ½ medium-sized onion, diced
- ½ cup cilantro
- Juice of 1 lime
FOR THE AVOCADO-CILANTRO SAUCE:
- ½ cup sour cream
- 1 ripe avocado, pitted and skinned
- ¼ cup cilantro, chopped
- Juice of 1 lime
- 1 jalapeno, chopped and seeded
- Salt, to taste

Directions:
- In a small bowl, combine the smoked paprika, garlic powder, dried oregano, onion powder, cumin, salt, brown sugar, and cayenne pepper. Sprinkle the mixture over both sides of your drum fillets, and then rub the seasonings in.
- Combine all of the Avocado-Cilantro Sauce ingredients in a food processor or blender. Pulse until well-combined.
- Combine all of the Slaw ingredients in a large bowl and mix well.
- Heat the oil in a heavy-bottomed pan over medium-high heat. Once heated, add in the black drum (a few at a time if you can’t fit them all at once). Cook for 4-5 minutes on each side, or until the outside is blackened and the fish flakes apart easily.
- Remove the fish from the heat, and if desired, warm the corn tortillas in the same skillet over medium heat, cooking for about 30 seconds on each side.
- Break up the drum into 2-3″ pieces. Stack the tortillas in twos. Distribute the fish evenly between the 6 sets of tortillas, and top with Slaw and Avocado-Cilantro Sauce. Serve.

Baked Flounder In Parchment Paper
|
|
Ingredients:
- 2 6 oz fillets of flounder, This recipe would work with any mild white fish, and even salmon!
- Sprinkle of kosher salt and cracked black pepper
- 2 TBSP basil pesto
- 1 cup grape tomatoes, halved or sliced
- 1 TBSP dry white wine
- 1 tsp butter
- A few thinly sliced rings of red onion, halved
- 2 TBSP fresh basil leaves

Directions:
- Preheat oven to 425° F. Remove fish from packaging, pat dry with paper towels, season with salt and pepper, and set aside on a plate.
- Parchment Packages.
- Cut the parchment into two segments — one segment per fish. The size of the parchment depends on the size of your fillets, but you should be fine with a piece of parchment that measures approximately 13" wide.
- Lay each segment down on a flat surface. Place one fillet in the center of each parchment paper (skin side down if there's skin).
- Slather 1 TBSP of pesto over each fillet, then top with tomatoes and onions. Drizzle the white wine over the fillets and drop 1/2 tsp of butter onto each fillet.
- Once everything is in place, take one of the sides of your parchment and fold it over the fish. After that, grab the other side, and fold it over enclosing the fish. Twist the ends of the parchment one at a time, securing each one by tying butchers twine around it. (See notes for very specific instructions for making parchment packs.)
- Place the parchment packs onto a baking sheet and bake for 12-15 minutes, or until the fish is opaque, flaky, and has an internal temperature of 145° F.
