Recipe:

• 2 1/2 oz rye whiskey
• 1/2 oz simple syrup
• 4 dashes Peychaud's bitters
• Absinthe, to rinse
• Garnish: lemon peel

Preparation:

1. Pour a small amount of absinthe into a rocks glass (1/4 oz or less) and roll to coat.
2. Combine rye whiskey, simple syrup, and bitters in a mixing glass with ice.
3. Stir until well-chilled, about 25 seconds.
4. Strain into a rocks glass over fresh ice.
5. Garnish with a lemon peel.

Cherry Limeade

Recipe:

• 4 oz tart cherry juice
• 1/2 oz lime juice
• 1/4 oz simple syrup
• 6 oz lime sparkling water
• Garnish: lime wheel and cherry

Preparation:

1. Combine all ingredients in a glass with ice.
2. Stir to combine.
3. Garnish with a lime wheel and cherry.
