This week's feature is a spin on the stuffed baked potato. We kept it simple but you can add any of your favourite toppings to dress it up.
We love yams and we use them often as a healthy complex carb choice in the Wanigan kitchen. They are hearty, versatile and this recipe can be a meal on its own if the yams are big enough! We couldn't let this superfood escape one of the last summer recipes!
We added an extra yam in the recipe so there was more to stuff back into the skins of the two servings. You may not need to add the extra one but you'll thank us!
Be sure to scrub the skins so you can eat them...they are loaded with nutrients you don't want to miss out on.
