The 2019 Kneading Conference welcomes Sarah Owens!
Sarah will be teaching a class called Beyond the Loaf at this year's Kneading Conference.

Class Description:
Learn to use your sourdough starter for more than crusty hearth loaves in this deep dive into baking fermented recipes using heirloom whole grains! We will discuss what to consider when converting traditional recipes to including fermented, nutrient dense batters and doughs and timing schedules based around flavor and digestibility.

In 2018, Maine farmers and millers were proud to learn that Sarah had won the overall award at the Tiptree World Bread Awards using stone ground flour grown in the Northeast and milled by Maine Grains . Sarah's wholemeal loaf was leavened with a 100% rye levain and included ‘Magog’ and ‘Glenn’ wheat, spelt, and rye flours. Sarah noted that the grains and flours she used were "mindfully grown, organic grains milled with integrity and I think it really makes a difference in the flavor and nutritional profile of what I bake."
About Sarah:
Sarah Owens is a New York City based cookbook author, baker, professional horticulturist, and culinary instructor. She was awarded a James Beard for her first book Sourdough and released her second in 2017 titled Toast and Jam . Her much anticipated forthcoming title Heirloom: Time Honored Techniques, Nourishing Traditions, and Modern Recipes will be released September 2019. Sarah believes strongly in the power of baking to foster community and social change; she is an advocate of sustainable agricultural practices to rebuild global grain sheds and believes stone milling can bring good bread back to the table. As a teacher of nourishing food traditions, she travels globally to encourage an interest in fermentation. Her business and workshop space is Ritual Fine Foods (formerly BK17 Bakery) located at The Castle in Rockaway Beach, NY where she teaches the alchemy and digestive benefits of natural leavening.

7. Hover over the workshop you want to add to your personal schedule and choose “Add to My Sched”.
8. Once a workshop is added to your schedule for a designated time slot, you are unable to add another during that same time.
9. If you are choosing a multi day workshop (i.e. Earthen Oven Building) make sure you have signed up for BOTH days. The schedule does not automatically place you in both days.
