July Sales

Recipe: Scott's Mediterranean Rice Salad

Ingredients 


Salad Ingredients:

• 4 cups long grain rice
• 2 celery stalks, chopped
• 2 cans chickpeas, drained
• 1 cup sliced kalamata olives
• 1 cup feta cheese, crumbled
• 1 small red onion, chopped

Dressing Ingredients:

• 1 bunch parsley flat leafed
• 1 1/2 cup olive oil
• 1 cup fresh lemon juice
• 1 bunch mint
• Oregano
• Coarse kosher salt and pepper, to taste

Equipment Available at Cornucopia

• Measuring cups
• Cutting board and knives
• Mixing bowls 

Directions

1. Cook the rice according to the directions.
2. Add all the ingredients for the salad and set aside in a large bowl.
3. In another bow, whisk the olive oil, lemon juice, herbs, and spices.
4. Pour over rice mixture and mix well.
5. Refrigerate overnight.
6. Serve and enjoy.

Notes

• The longer you allow the salad to marinate, the better it will be.
• This is a great dish for a hot, summer day!
