Recipe: Kendra's Favorite Curry Chicken Salad

Salad Ingredients

• 3 cooked and cooled medium chicken breasts cubed or shredded
• 1 small can water chestnuts, chopped
• 1 cup salted cashews
• ¾ cup red grapes, halved or quartered
• 1/2 cup diced celery
• 1/3 cup dried cherries, raisins, cranberries or something similar
• ¼ cup minced red onion

Dressing Ingredients

• 1 cup mayo
• 2 tablespoons white wine vinegar
• 1 teaspoon soy sauce
• 1 teaspoon curry powder
• 1 teaspoon dry mustard
• Paprika to sprinkle on top, if desired

• Cutting board
• Grape slicer
• Measuring cups and spoons
• Adjustable measuring cup
• Food chopper
• Knife

Directions

1. Cook and shred chicken breasts.
2. Mix all of the dressing ingredients together in a large bowl.
3. Add salad ingredients to the dressing and mix thoroughly.
4. Serve on lettuce, by itself, on croissants or bread.

Tips

• If making the curry chicken salad to use on sandwiches, it is recommended to shred the chicken breast.
• Chicken can be cooked the day ahead of time by placing chicken breasts in a slow cooker, covering them with chicken broth, and cooking on low for 4-6 hours.
• Leave the chicken to cool in the chicken broth and the next day it will shred in your hand!
• Chop up a few pieces of the chicken breast to add some bite sized pieces to the mix.
