Recipe: Coffee Shop Egg Bites by Brenda Abrahamson

Ingredients

• 10 large eggs, whisked
• 3 oz. diced Canadian bacon
• 4 oz. shredded Gruyere cheese
• 4 oz. cottage cheese
• ½ tsp. salt
• Pinch of pepper

• Trudeau silicone muffin pan
• EVO oil sprayer
• LockNLock glass storage containers
• Epicurean cutting board
• Microplane box grater
• Anchor Hocking Batter Bowl
• RSVP measuring cup and spoon

Directions

1. Preheat oven to 300 degrees.
2. Prepare standard 12 cup muffin pan (we prefer the Trudeau silicone pan for easy release). Use your EVO sprayer to squirt a little olive oil into 10 cups. Brush the oil around the sides of the cups with a pastry brush.  
3. Fill a baking pan, like a jellyroll pan, with 1” of water and place on bottom rack of oven.  
4. Mix all ingredients together in a batter bowl. Start with the eggs and whisk before adding the remaining ingredients.  
5. Fill 12 prepared cups with mixture. 
6. Bake 30 minutes or until set.
7. Remove from oven and cool 5 minutes.
8. Store 5-7 days in refrigerator or freeze.
9. Microwave to warm.

Tips

• A batter bowl works great for helping pour the mixture into the cups. If you don't have a batter bowl, a mixing bowl and ladle work great.
