Summertime and the Grilling is Easy...

Chicken Satay with Peanut Sauce



Love, love this recipe - it's easy and most of the ingredients are easily accessible. This is not a last-minute dish, as the chicken needs to marinate for at least two hours, or overnight. And that peanut sauce is OMG fabulous! I could eat it on just about anything!

Asian Cucumber Salad



This salad is crisp and cool and is the perfect side for the chicken. I don't necessarily salt and drain the cucumbers before preparing the salad, especially if you're using the small Persian cucumbers.

I just heard about this.... Freeze different kinds of fruit juices in an ice cube tray, whatever you like, and then pop them into a glass, and pour prosecco over them. Doesn't get much better, or easier than that!
