Wild Edibles Supper Club - The Spring Forage

Come forage the woods, wetlands and roadsides of the Haliburton Highlands. Learn how to identify and when to harvest the choicest parts of wild edibles. In June we'll harvest and prepare wild leeks, Japanese knotweed and evergreen tips. Returning to Windfall Food Forest we'll preserve a part of our harvest drawing on the ancient art of fermentation. Then we'll gather around the long trestle table nestled among the pines overlooking the lake to savor some local and wild fare. The six course tasting menu will include grilled Haliburton County lamb with knotweed chutney, Milford Bay smoked trout with roesti and spruced cream, leek terrine with spruce crackers, knotweed custard pie made with local eggs and honey. (Vegetarian options available). Meet guest chef, Audrey Demers an advocate of slow food and supporter of the Chefs' Congress.
