After 12 years with Liberty Athletic Club, RJ will transition his career to the healthcare sector as a Health and Wellness Coordinator at IHA in Ann Arbor. This position aligns well with his academic training (a master degree in public health) and professional aspirations.

We will miss RJ’s presence at Liberty Athletic Club, as well as his unwavering passion and dedication to fitness, his humor and enthusiasm, and classic rock music during Small Group Training! On behalf of Liberty, we want to express a sincere appreciation for all that he has given to the Liberty community. RJ’s last day will be December 23rd.

Fruit and Creamy Cinnamon Dip
from the desk of Bethany Williston, M.S., Registered Dietitian Nutritionist
Athletes are always told they need to eat carbohydrates and protein after working out. An easy snack that fulfills these requirements is this recipe. You make the dip overnight. You can cut up the fruit anytime. Fast, easy, kid-friendly, and delicious!

Bakeware: bowl, something long like a wooden spoon, cheese cloth or a thin dish towel
Ingredients:
2 cups plain Greek yogurt
½ tsp cinnamon
2 cups fruit- green apples, red apples, grapes, pears, and berries all work well

Directions:
  1. Scoop the yogurt into the middle of a dishtowel
  2. Pull up the four ends of the dishtowel and tie them together
  3. Thread a wooden spoon or other long piece underneath the knot and lay it on the sides of a bowl so that the bottom of the dishtowel doesn’t touch the bottom of the bowl.
  4. Put this in the refrigerator overnight.
  5. The next morning, you will be able to scoop out the concentrated yogurt from the center of the dishtowel into a new bowl. Discard the drained liquid.
  6. Add the cinnamon to the yogurt and stir
  7. Prepare the fruit into sticks or cubes
  8. Dip the fruit in the cinnamon yogurt or add the fruit and eat with a spoon.
