Each year, the undergrads in her experimental biochemistry class purify lysozyme, an enzyme found in egg whites. For the 2025 edition, they extracted the lysozyme from chicken, duck, and quail eggs.
Lysozyme is found in plants and animals and helps protect organisms from bacterial infections.
