What's Happening in CoSE

It’s always egg-citing in Professor Caryn Evilia’s classes!

As part of the lab exercise, the students purify lysozyme, an enzyme in egg whites. Lysozyme is found in animals and plants and helps protect organisms from bacterial infections.

This year, they got to choose where they got their lysozyme: chicken, goose, or emu eggs.
