Learn How to Make Fresh Pasta Through Our Pasta Making Series! 

Join Villa Charities and Chef Anthony Sestito from Pastaio, for a culinary journey to learn the Italian tradition of fresh pasta making. Participants will be taught how to make fresh egg dough including the process beginning from the “well” method, the importance of resting and choosing the right flours. Each class explores different pasta shapes ending with participants savouring the final pasta, paired with various sauces.

A focus on handmade pasta shapes including fettuccine, pappardelle, farfalle, garganelli, soppressine.

Beginner/intermediate class

A focus on eggless handmade pasta shapes including cavatelli, orecchiette, fileja, lorighittas.

Final dish: Orecchiette with sausage & rapini

Filled Pasta - Various Shapes

Tuesday, December 6 • 6:30pm

Intermediate class

A focus on simple, yet significant filled pasta shapes and styles as well as different types of fillings and their pairing with shapes and sizes: classic square ravioli, cappelletti & cappellacci, triangoli/fazzolletti, balanzoni, tortellini, agnolotti del plin. Fillings include spinach & ricotta, butternut squash & ricotta, traditional tortellini filling & a traditional Piedmontese meat filling.

Final dish: Cappellaci Di Zucca, with sage, pine nuts & pancetta

The Shapes of Sardinia

Tuesday, January 24 • 6:30pm

Intermediate/advanced class

A class celebrating and learning about all the various shapes of pasta from the region of Sardinia, beginning with the simplest of shapes, to some of the most difficult. A focus on styles typical of the cuisine of Sardinia including malloreddus, spizzulus, lorighittas, culurgiones.

Final dish: Culurgiones with tomato & basil

Lasagne alla Bolognese

Tuesday, February 28 • 6:30pm

Intermediate/advanced class

Learn about the iconic and very traditional way of making lasagne from Bologna. Guests will learn to prepare the sheets, the sauces, the importance of layering and they will assemble their own lasagne to take home.

Final dish: Lasagna that has been cooked from the main kitchen in the interest of time.

Lilian Broca’s “Mary Magdalene Resurrected” Exhibition Now Open

Experience this new monumental mosaic series at the Joseph D. Carrier Art Gallery by master artist Lilian Broca. Made of 6-foot-high mosaics constructed from Venetian glass, this series of 7 monumental scale panels explores the figure of Mary Magdalene. In Broca’s rendering Mary Magdalene is not a woman in need of redemption and forgiveness but a spiritual companion to Jesus, someone who both supported his message but truly embodied it through her life and legacy. Broca’s work will leave viewers contemplating and reassessing this woman who has been greatly misunderstood for 2000 years. Exhibition continues to October 20.

An Evening of Italian

Poetry Reading with Fabio Andina and Guido Catalano

On the occasion of the 22nd Week of Italian Language in the World, the Consulate General of Italy in Toronto, the Consulate General of Switzerland in Montreal, the Istituto Italiano di Cultura in Toronto, and Villa Charities present an evening with Italian poet, Guido Catalano, and Swiss-Italian poet, Fabio Andina, who will be offering dramatic readings of their compositions. The GO-VAXX Bus Vaccination Clinic Returns on October 15

Villa Colombo Toronto in collaboration with the Ministry of Health is bringing the GO-VAXX Bus back to the Villa Charities campus, on Saturday, October 15 from 10:00am to 6:00pm. The Bivalent Vaccine will be available at this clinic for anyone who qualifies. Appointments can be made online on the Ministry website four days before the clinic. Walk-ins will also be accepted.
