Research increases your new product’s chance of success

Launching a new food product into the market can be very challenging. So challenging, fact, that only about 10 – 20% of new products succeed. While there can be multiple factors at play, a common one is not taking the time for research during the product development process.

Institute of Food Technologists member Carolyn Ross is convinced an electronic tongue (e-tongue) will gain more traction with winemakers to detect early spoilage. Research recently published in the Journal of Food Science showed that the e-tongue was more effective than its human counterparts in detecting early microbial spoilage. Full Story ⟶

Unexpected flavor pairings are driving flavor trials. The recent surge in consumer interest for hot honey and other “swicy” pairings is driving new flavor development, and Gen Z and social media are strong factors in new-to-market offerings according to the latest Flavor Flash Report. Diageo will trial paper-based packaging for bottles of Bailey’s Irish Cream Liqueur. The dry molded fiber bottle is 90% paper, features a thin plastic liner, and a foil seal. The bottle can be recycled in standard paper streams and represents Diageo’s first consumer-facing trial with paper-based bottles, reported FoodBev. Full Story ⟶

Nestlé is releasing a lineup of frozen food for people on Ozempic and other GLP-1 drugs. The new frozen food brand called Vital Pursuit will consist of 12 portion-controlled meals, high in protein plus fiber, “intended to be a companion for GLP-1 weight loss medication users and consumers focused on weight management.” Full Story ⟶
