3. Wild Blueberry pancakes or waffles with blueberry syrup. Or mix with spreadable cheeses and serve with fruit, veggies, and crackers for a quick appetizer.

Wild Blueberry Crisp

Equipment: Large & medium mixing bowls, 9-inch pie dish or 11x7 baking pan, whisk or electric mixer, rubber scraper  

Prep Time: 10 minutes
Cook Time: 40 minutes 
Preheat: oven to 375 degrees F 

  

Number of Servings: 12 or more depending on ages 

  

- 6 cups frozen Wild Blueberries, Wyman's of Maine *KKA 

- 2 Tbs organic honey, by Wholesome Sweeteners  *KKA 

   Mix blueberries and honey in a large bowl and pour in a 9-inch 

   diameter pie dish or 11x7 baking pan.   

- 1/2 cup organic white whole wheat flour

- 1/2 cup rolled oats

- 2 Tbs brown sugar

- 1/2 tsp ground cinnamon

- 1/4 tsp ground nutmeg 

   Combine in a medium bowl. Mix well.

 

- 1/2 cup butter

   Gradually fold in light butter until crumbly. Spread flour mixture evenly    over berries. Bake for 40 minutes or until berries are bubbling and  

   topping is golden.

 

- 1 1/2 cups vanilla Greek yogurt   

   Serve crisp warm and top each serving with 1 Tbs vanilla Greek  

   yogurt.

 

Options: Replace whole wheat flour with other whole grain flour or gluten-free flour/baking mix.

 

120 calories, 2.5 g fat (1 g sat fat, .5 g poly fat, 1.5 g mono fat) 2.5 mg cholesterol, 40 mg sodium, 4 g fiber, 10 g sugar, 4 g protein

  

6 Natural Colors: white, tan, brown, blue, yellow, golden  

6  Food Groups: whole grains, dairy, fruit, herbs/spices, sweet, essential fatty acids (EFAs)
