We are at the time of the year that all true seafoodies look forward to. I am of course talking about the season of Wild-caught Salmon, one of the best tastes of the summer time! Full of flavor, rich in omega-3's, and sustainably caught, wild salmon is the perfect choice for weekend barbecues with friends or even for a quick weeknight meal. Not to mention, Wild Salmon is also a fantastic source of DHA, the omega-3 fatty acid that is essential for brain development, which comes from phytoplankton. DHA is stored in salmon's fat, and one 4-ounce serving of salmon can dish up 2,400 mg of omega-3s! But what's the difference between our Alaskan salmon and others? Simple; the difference is freshness.
Groomer's Seafood only brings in fresh, never frozen, Wild Salmon. While this may sound common for a fresh fish market, many "fresh" markets merely bring in salmon frozen and thaw it out for the daily display. Groomer's Seafood just refuses to do that. 3- 5 lbs Flounder
1 3oz package Nuts Over Fish Almond Topping
|

Instructions:
- Simply press the Nuts Over Fish Almond Topping onto the surface your flounder to coat.
- Spray lightly with olive oil and squeeze a wedge of lemon.
- Bake at 425 degrees. Allow 12 - 15 minutes cooking time.

Pistachio Topping

Instructions:
- Simply press Nuts Over Fish Pistachio Topping onto the surface of your salmon to coat.
- Spray lightly with olive oil and squeeze a wedge of lemon.
- Bake at 425 degrees. Allow 15-18 minutes cooking time per inch of fish.

Grilled Whole Red Snapper

Ingredients:
- 1 3-4lb whole red snapper (cleaned and scaled)
- 1 lemon cut into ¼ inch slices
- 3-4 sprigs of fresh thyme
- 3-4 springs of fresh rosemary
- ¼ cup of olive oil
|
|
Instructions:
- Heat grill to medium high heat (350-375)
- Rinse fish under cold water.
- With a clean paper towel dry off both side of the fish. This will help keep the skin from sticking to the cooking grates.
- Stuff the cavity of the fish with thyme, rosemary, and lemon slices
- Brush each side of the fish with olive oil
- Using a paper towel and tongs brush the grill grates with olive oil
- Place fish on grill and cook each side for 7-8 minutes turning once, until meat is flaky and can easily be pulled apart with a fork.
- Remove from grill and separate the filets with a knife and fork.

Stuffed Whole
Flounder Recipe

Ingredients:
- 1/2 pound butter
- 1 cup white onion, minced
- 1/2 cup green onions minced
- 1-1/2 cups celery, minced
- 3 cloves garlic, minced
- 1 cup parsley, chopped
- 2 cups seasoned breadcrumbs
- 2 cups cornbread, finely chopped
- 1/2 pound crabmeat
- Salt and pepper, to taste
- 8 flounder (1 to 1-1/2 pounds each)
- 16 whole shrimp

Instructions:
- In butter, sauté white onions, green onions, celery, garlic, and parsley.
- Gradually stir in 1 cup of bread and 1 cup of cornbread, cooking until thickened.
- Add crabmeat and thicken further with remaining breadcrumbs and cornbread.
- Add salt and pepper to taste.
- Split each flounder and fill with dressing.
- Garnish each fish with 1 whole shrimp. Then cook under broiler about 15 minutes or until fish is done.
