WE WILL HAVE CORN
Smit's Farm is just south of Chicago on the Illinois side of the Indiana border. Can't get much more local than this! As well as the corn, they also supply most of our fresh herbs, which is why our sauces and gazpacho taste so good. Our tomatoes, peppers and cucumbers come from a farm in Michigan, picked on Friday for a Saturday Farmer's Market, where we pick them up. Corn also gets picked on Friday, it's super sweet to eat for several days. Sadly, grocery store corn travels on trucks and could be two weeks old by the time it arrives at the store. Ours is unsprayed, we husk it and trim off any critters. It's the best!

WILD SEA SCALLOPS

Great for kebabs or sauté - or in any of your favorite scallop recipes. Dry pack means these tasty scallops have not been treated with chemicals. If you've ever had scallops that taste metallic, they're chemically treated to retain moisture. Ours are chem-free, sweet and wonderful to eat. Check out some tasty Scallop Recipes HERE.
NB: Scallops are a wild product. Genuine scallops are not uniform in size and shape. Cheap, uniformly shaped scallops are almost certainly fake, cut out of shark or skate wing.

EZ PEEL SHRIMP

We will have fresh salmon burgers, WBW burgers, and possibly some fresh tuna burgers, easy to grill and great on a bun.
Fish for Grilling:
The types of fish that are best for grilling are the thicker, meatier fish, such as halibut, tuna, marlin, swordfish, salmon, mahi mahi, sea bass, plus shrimp and scallops - ask us for suggestions. Fish cooks quickly, so less time standing in front of the grill!
Sides:
Rice Pilaf, Wild Rice with Dried Cherries, Pasta Salad, Calico Couscous, Herb Roasted Potatoes, Roasted Potato Wedges, Potato Salad, Broccoli Salad & more - selection varies daily.

In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess:

Recently we did an oyster bar for a party in Hinsdale, and a lobster tail birthday party in Kenilworth.
And in early October, we did a socially distanced wedding reception with individual lobster boil dinners.
