With all of the above available and especially seasonal this time of year, our farmers are here to turn Northampton St. into a produce parade. Thanks to our farmers Salvaterra's Gardens, Cabbage Throw Farms, Scholl Orchards, and Aqua Sprout LLC, there is a fantastic variety of fresh produce available week after week. Bring those reusable bags to fill up with the sweetest carrots, spiciest radishes, and savory squash and get ready to see if Puxatawney Phil sees his shadow on Gobbler's Knob this year. Whether or not we have six more weeks of winter, I think we can agree that winter squash season is far from over. Cabbage Throw has a unique take on squash with a recipe for Kabocha squash cookies (see below)! And a recipe for raw squash (yep!) from the Six Seasons cookbook by James McFadden is below to give you a reason to venture into eating raw squash. Let us know if you make the recipe/s!

It's no secret that we're in confusing times for what predicting the future of federal food resources will look like. What we do know and what we will keep true: The Easton Farmers' Market is and will remain a place to connect everyone with the food they need.
In addition to processing EBT cards to be used at our vendors throughout the market, distributing matching Food Bucks to spend on fresh food, and many of our famers accepting FMNP checks, we have resources to connect folks with food pantries in the Lehigh Valley.
Please visit us at our little red EBT tent and let us know if you, or someone you know, would like help accessing local pantries in the Easton area. We have resources to connect everyone with the food they need to support themselves and provide their families with proper nutrition.

Ingredients
- ¼ cup Kabocha
- 4 Tbsp Sugar
- 3 ½ Tbsp Vegetable Oil
- a pinch of Salt
- ½ tsp Vanilla Extract
- ¾ cup Cake Flour
- 1 cup Almond Flour
Instructions
- Preheat the Oven: Set your oven to 160°C (320°F).
- Cook the Kabocha: Cut the kabocha into small pieces and steam or boil until tender.
- Mash the Kabocha: Remove the skin and mash the kabocha in a bowl until smooth to make a puree.
- Prepare the Dough: Add sugar, oil, and vanilla extract to the mashed kabocha and mix until well combined. Sift cake flour and almond flour into the bowl, then mix until a dough forms.
- Shape the Cookies: Roll out the dough and use a cookie cutter to cut into shapes. Top each cookie with a pumpkin seed.
- Bake: Place the cookies on a baking tray lined with a silicone mat. Bake for 20 minutes at 160°C (320°F).

Cabbage Throw Farm Winter Sweet Squash makes a delicious savory soup but are you craving a sweet treat? This kabocha squash can be baked into a delicious crispy cookie! Simply add mashed squash to a sugar cookie dough, cut out shapes, bake and enjoy with a hot cup of tea or squash soup.

A big thank you to Scholl Orchards for providing us with an array of amazing apples to sample at the Wilson LINCS Food Pantry this past Monday. Pantry visitors were offered a sampling of apples and there seemed to be a favorite: the Ludacrisp! Sweet, fruity and lives up to its name: crisp!

A special highlight on a new addition this week: winter mix! This greens mix is a flavorful array of all of the greens they have available.
Additionally, they will have spinach, spring mix, baby chard, baby kale, mizuna, tatsoi, red cabbage, green cabbage, pak choy, tuscan kale, green kale, scallions, red and yellow onions, red and yellow potatoes, butternut squash, radishes, turnips, beets, carrots, and watermelon radishes.
