Winter Week 10: Smoked Wings, Fermented Tomato Relish, and More

Good Morning Trevor,

This week we dive into some of the items we "put away" this fall. This ranges from fermented green tomato relish - a healthy, lacto ferment - to chicken wings, brined, seasoned and smoked for easy enjoyment.

And a core component of this bag is ratatouille. This French vegetable stew is excellent as a topping or side dish. Try it on pasta, with eggs, served alongside chicken breast, or even on a bed of creamy mac and cheese. This product takes our kitchen the better part of August to make. Each vegetables is diced and roasted separately before stewing together with peeled, roasted whole tomatoes.

As for anything exciting and new this week....not much. But we have been sorting thru the freezer and we have a few freezer promotions this week. See below.

Under-Sized Chickens.

When we sort chickens to feature in the share, we cull out anything under 4#. After last week's share, we have a mess of open boxes with smaller chicken in them. At this point, they need to move out.

Small Chickens - 2.5 to 3 # - $8

Small Chickens - 3.0 to 3.5# - $10

Bone In Pork Chops - $8.5 per lb

I've been working on new presentation of a few cuts. The guys at Newswangers cut some bone-in chops for us last week. The bone-in pork chops are always cut from the fattier, more marbled rib section of the hog. This begins at rib #5 just after the butt roast and goes thru to the end of the rib cage where the boneless loin is.

These chops are bone in, but not Frenched like the OCP presentation.
