Under-Sized Chickens.
When we sort chickens to feature in the share, we cull out anything under 4#. After last week's share, we have a mess of open boxes with smaller chicken in them. At this point, they need to move out.
Small Chickens - 2.5 to 3 # - $8
Small Chickens - 3.0 to 3.5# - $10
Bone In Pork Chops - $8.5 per lb
I've been working on new presentation of a few cuts. The guys at Newswangers cut some bone-in chops for us last week. The bone-in pork chops are always cut from the fattier, more marbled rib section of the hog. This begins at rib #5 just after the butt roast and goes thru to the end of the rib cage where the boneless loin is.
These chops are bone in, but not Frenched like the OCP presentation.
