Happy New Year! The cows are very interested in these three Hansens sledding behind the four-wheeler on the fresh snow. The cows even kicked up their heels at the excitement! Many people wonder about the cows' comfort during the cold winter. As long as they have shelter from the wind, dry bedding and lots of feed, they stay comfortable in the barn. It's much harder to keep them comfortable in summer's heat and humidity than it is in the wintertime.

We had a big winner in our December CA$H COW contest! Congrats to Shari Krull of Waterloo for finding a $100 jug.

Our contest resets in January! We will label 1 jug with $100. Best chance to find it is right away at the beginning of the month! But make sure to keep looking throughout the month as we mark ten $5 jugs every week!

Stores closing early on Friday, Jan. 5
Hansen's Dairy stores in Cedar Falls and Waterloo will close early on Friday, Jan. 5, for the Hansen's employee holiday party. Both stores will close at 5:30 p.m. We apologize for the inconvenience and thank you for your understanding.   
Festival of Cheese winners
Thank you to all who came out for our Festival of Cheese on Dec. 2! We appreciate those who waited in line for a long time ... at least it was nice outside! 
 
Congratulations go to Donna Carr of Waterloo (pictured), who won our $60 cheese basket from the giveaway drawing. Kenzie Busch, a UNI student, also won a half-ham.    
Turkeys, hams available at Hansen's stores
Hansen's Hams and Bell & Evans turkeys are still available at our stores. Pick up one or two to stock up for hearty winter meals. Check out the recipe for Turkey Tetrazzini at the bottom of this e-Moosletter!

  • Bone-in, shankless, cured only with their own natural juices and certified hickory smoked, made especially for Hansen's customers.

Customer of the Month

The January Customer of the Month is Theresa Sayre of Reinbeck.
 
Theresa's grandson Rhett
Theresa usually buys our milk from Trunck's in Reinbeck, but she occasionally stops at the farm store on her way back home from work at Hudson Middle School.  
 
"I bought 10 bags of cheese curds to give to co-workers at Christmas!" she said. "I love that I'm supporting a local family's business and that your products are so fresh. I'm very particular about what we eat and drink, and I never worry about what's in the things I get from Hansen's."
 
Theresa's grandson Rhett was a cow for Halloween, so she is excited to take him on a farm tour this summer. "He's 2 and is absolutely obsessed with cows," Theresa said.

Cow of the Month
Our January Cow of the Month is absolutely the friendliest cow on the farm.

Melody is 7 years old and is pictured here with her favorite human, Reese Hansen. We think Melody wants to be human sometimes.  
 
Melody has had three bulls and three heifers in her lifetime. She is certainly not the highest milk producer in the herd, but she makes up for it by being highly entertaining. She saves our employees some time by opening the doors to the milking parlor all by herself. She is also an excellent helper mother to all baby calves born under her watch.  
 
We even gave her a present for Christmas. Watch her open it --- and the parlor door!
 
 
    
Recipe
Cooking with Hansen's
Typically casseroles use some sort of "cream of" soup, but this recipe adapted from SpendWithPennies.com instead gets some extra richness from heavy cream, milk and spreadable cream cheese. You can use plain cream cheese, but a garlic variety would add even more flavor.
 
Starred ingredients can be purchased from Hansen's Dairy stores. 
 
Turkey Tetrazzini       
Prep time: 20 minutes
Bake time: 40 minutes 
Serves: 8
 
INGREDIENTS
  • 12 oz dry spaghetti
  • 3 tablespoons Hansen's butter*
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3/4 lb mushrooms, sliced
  • 3 tablespoons flour
  • 2 1/4 cups chicken broth
  • 8 oz spreadable cream cheese (plain or garlic flavor)
  • 3/4 cup Hansen's heavy cream*
  • 3/4 cup Hansen's milk*
  • salt & pepper to taste
  • 1 tablespoon fresh parsley
  • 1 teaspoon Italian seasoning
  • 2 cups chopped turkey
  • 2 cups mozzarella cheese*, divided
  • 1/4 cup Parmesan cheese*
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Cook spaghetti al dente according to package directions.
  3. Cook butter, onions and garlic over medium heat until softened. Add mushrooms and cook an additional 3 minutes. Stir in flour and cook 1 minute.
  4. Add broth, cream and milk all at once. Cook until thick & bubbly, let boil 1 minute. Stir in cream cheese until melted. Add parsley and seasonings.
  5. Combine spaghetti, turkey, 1 cup of mozzarella cheese and sauce. Pour into a greased 9×13 pan. Top with remaining mozzarella, cover and bake 20 minutes. Sprinkle with Parmesan and bake an additional 10-15 minutes uncovered until hot and bubbly.
