There is a lot going on these days. To add to the excitement, calf #6 above was a surprise. So was the fact that 18 of my 23 heifers were bred. The question is, who's the daddy? And where is he. We spent the better part of last week staring at beef genitalia trying to figure out what's next. Read below to get updated on what is going on around the farms.

Pie "Season" Starts -
Rhubarb Cream Pie

Typically we do fruit pies, so there is a "season" for pies. Right now, we are just getting the first rhubarb, which we typically use for strawberry rhubarb pie and jams.
But Maddie in our kitchen had an idea. "At home, we make a rhubarb cream pie." I challenged her to make me a sample. We made a few variations and settled ont his one.
It's tart rhubarb sweetened up with a bit of organic sugar and set into a thick custard made from A2 Guernsey cream and farm fresh eggs! We separate the eggs and fold in the whipped whites for a little extra lift and a fluffy top.
Sold in small (6 inch) and large (9 inch) pies. Keep refrigerated and serve cold.

Bent and Dent: Red Pepper and Mozzarella Chicken Brats
Our processor is supposed to form our sausage, then part freeze it before vac sealing. Otherwise the force of the vacuum machine squishes the sausages.
These sausages were not packaged that way and therefore look a little messy. We need to move them out!
Clearance this week on our red pepper and mozzarella chicken brats. These are oozing with cheese. Bake them off in the oven on a resting rack or over indirect heat on the grill. They will make a mess out of a skillet.

Who's The Daddy?
Over the winter, my beef are in a rented barn so that we don't destroy the fields when they are soft. It's a lot of work, hauling all the feed in and all the manure out, but it has worked well for the health of the animals and the pasture.
Last week, we had a surprise calf. I then started noticing udders on a few other heifers (young females). We sorted out the 23 heifers from the group 80. In came the vet to preg check them. That's Dr Brad.
With a long sleeved glove, a jug of lub, and the magic touch, Dr Brad was able to reach in and feel for a calf. 18 of 23 are due in the next few months. Is this good news or bad news?
For me, I was counting on most of these heifers to finish out early this summer for cutters. That's not going to happen anymore. But, right now feeder calves are at record highs again. A week old calf is over $1,500 at the local auction. So maybe this is a good surprise. The mom and calf can get the benefit of summer pasture and we'll increase our supply for the future. It just creates a logistics problem right now for me!

It's a Great Day to Be a Cow...Turning the Beef Out
The last few weeks, a lot of work has been taken to get beef pasture finally ready again. This means repairing fence, reseeding bare spots, and fixing the water supply.
One of my big projects lately has been to install new water fountains for the beef. Research shows that if water is available with in 800 feet and within sight, the cattle can gain up to 1/2 lb more per day. That's incredible!
So I'm trying it out. I'll give you the updates later the summer as we start this new rotational grazing setup.
As the beef come off of hay, they really go nuts for fresh grass. Right now the grass is knee deep and lush. It's really a great time to be a cow!

It's a Terrible Day to be a Chicken
The last week has been just wet. One deluge after another has wrecked havoc on the poor chickens.
That's a photo from last night. I was just wrapping up chores around 7 when the skies opened up.
The wind came with the inch of rain and started flipping our chicken tractors upside down. The poor birds were wet and cold.
I spent until dark outside turning them over, fixing them, and catching about 500 chickens and putting them back in their homes.

Thanksgiving has started
Our heritage turkeys are hatching at record numbers this year. It's crazy to think that we haven't even started our summer season yet and I'm working on Thanksgiving.
Here is a group of 175 Standard Bronze Turkeys that came out of the brooder and are getting hardened off in another small structure. Every 10 days we are hatching about 100 more, then once per month we group them up like this.

Storms and Hail Damage for the Veggies
Last night while I was struggling with wet, cold chickens, the calls started coming in from the produce growers.
"Trevor, I'm very sorry but we won't have any radishes for you tomorrow."
Sorry. Don't be sorry. I'm sorry to hear about your loss.
While we had thunderstorms, the growers south of us had hail. Mike and Joseph (neighbors near New Bedford OH) grow a lot of produce for us. They had an inch fo hail, approx 1/4 to 1/2 inch size.
This is from what Joseph emailed me at 10 PM: "The storm has seiged to rage! Water and hail is still visible!! Most of the plants that were growing that we had planted into the soil are ruined! EVEN THE PLANTS THAT WEREN'T PLANTED THIS SPRING!!! That would be the strawberries and the rhubarb!!!!"
He further elaborated that the tomatoes, zucchini, kale, and chard were all crushed. We'll be stopping down later today to further evaluate the damage. This is such sad news. Hopefully sunnier days are ahead!
