Sweet Pickles

Ingredients:


- Select 50 cucumbers 2 1/2 inches long (about 3 1/2 lb.) wash.

- Dissolve 1/2 c. coarse medium salt in 4 c. boiling water.

- Pour over cucumbers. Let cucumbers stand in liquid until cool. Drain. 

- Combine 1 1/2 qt. cider vinegar, 2 c. water, 1 Tbsp. mixed pickling spices and 3 c. sugar; heat to boiling. 

- Pour over cucumbers, let stand for 24 hours. 

- Heat cucumbers and syrup to boiling, pack cucumbers in hot, sterilized jars; fill jars with hot syrup.
