We've reached the end of the year!

If you have been going down one road in life and it hasn't been working, it's time to change directions. Your life could change with one decision, that will reflect another, and create a domino effect. 

Reflecting on this past year, I see that my life has changed in so many profound ways. For that, I am thankful for all my blessings, breakthroughs, and yes, even my breakdowns because they taught me what I needed to change.

Take some time before the year ends to reflect. Sit still. Breathe. Tune out the chatter inside your head. Stop. Inhale. Exhale. Ground yourself. Now be honest with yourself. What worked and what didn't work. Then and only then, will you be able to make decisions that will lead you to a different outcome.

The perfect soup to have in cold weather. A recipe from my Kitchen Kickstart . Nutritious and delicious. Vegan. Dairy Free & diabetic friendly!

Serves: 4

Prep Time: 10 minutes
Cook Time: 30 minutes

2 tsp olive oil
-1 medium onion, chopped
-5 garlic cloves, minced
-Bunch celery, chopped
-1/2 tsp ground coriander
-1 1/2 tsp ground cumin
-1/4 tsp ground cinnamon
-1/4 tsp cayenne pepper (optional)
-6 cups chicken or vegetable broth

-2 cups dry lentils
-Pinch of sea salt & black pepper
-4 Hard boiled egg and 4 teaspoons tahini paste (optional)

1. In a large soup pot, add the oil and sauté the onions and garlic over low-medium heat for about 5 minutes
2. Add the celery, and sauté for another 3 minutes. Add the spices, salt and pepper, lower the heat, and cook for another 2 minutes
3. Rinse and drain the lentils, and add them to the pot with the onions, garlic, celery, and spices
4. Add the broth, and stir with a spoon. Bring the heat to medium-high, until it comes to a boil. When it boils, reduce the heat to low, cover it, and simmer until it becomes thick, and lentils are soft ( about 30-40 minutes
5. If you like your soup “ thin” rather than “thick, simply add more broth.
6. Serve warm, and sprinkle cumin and red pepper flakes on top, 1 hard boiled egg for each one, and a teaspoon of raw tahini paste
