Apple Butter Oat Bars
1 c. brown sugar
½ c. butter, softened at room temperature
¾ c. white flour
½ c. whole wheat flour
1 ¼ c. uncooked rolled oats
¾ c. apple butter at room temperature
Preheat oven to 400 degrees. Coat a 13x9x2-inch pan with butter or cooking spray.
In a large bowl, beat the sugar and butter until light and fluffy. Add both flours and oats to the butter mixture; mix at low speed until crumbly.
Save 1 cup of the crumb mixture for topping and press the rest in the bottom of the prepared pan. Spread the apple butter over the top of the
crumb mixture. Sprinkle the rest of the crumb mixture over the top.
Bake for 18-25 minutes, or until light golden brown. Cool completely before cutting into bars.
