These cold temps are a good reminder of why we grow cold hardy grapes! The vines can withstand temperatures of up to -25!

News from the Cellar

The cellar has been busy! Currently Josh and Derrick are working on protein stabilization of the wines. They add bentonite which the protein binds to so its easily filtered off. This is done to white wines and helps with wine clarity.

Filtering, bottling, cleaning, and sanitizing are still underway! We are gearing up to bottle over 3,000 cases over the next couple of months. All will be ready for the 2022 spring/summer/fall season on the patio!

Hope to see you this winter!
