Cellar & Vineyard Updates

Bottling Preparation

The cellar is ramping up production with the completion of cold stabilization (removing the tartaric crystals known as wine diamonds with cold temperatures). Whites and Roses are getting prepped for early spring bottling. Red wine and Perry are softening in oak. Port is relaxing in neutral barrels, allowing the brandy and wine to mature and mellow into an exquisite, sensual balance.

Pruning Has Begun!

Bitter cold and snow has the grape vines in full dormancy which has allowed us to begin the pruning process. We remove 90% of the previous years growth, hand selecting the best individual spur and buds for optimal sap flow starting in early spring. Four of the eight vineyard blocks are completed. We are strapping on our snow shoes to finish before spring!
