15th Annual Zucchini 500 Rolls onto the Riverfront
It's hard to believe we've been racing zucchini for 14 years! Wondering how this zany fast food challenge began? Well... way back, when Centre Square was a bit of a ghost town, and there were more squash at the market than there were shoppers, we were forced to get creative. It was a typical July - hot and steamy, and squash were everywhere! And well, they were kind of 'car shaped.' So we borrowed a pinewood derby track from the local cub scout pack, and encouraged our customers to carve the fastest car and get ready to squash the competition. The event grew every year, as did the market. And in our second year, real life NASCAR official Peter Brohl joined us, and he and his wife Barbara have been instrumental in running the race ever since. We graduated from the pinewood derby track and soon had a track of our own, thanks to Easton's Eisenhardt Mills. This local mill graciously crafted and donated a gorgeous zucchini track that we continue to use today. Over the years we raced in the circle, at the Crayola Experience, and we even took the show on the road to Steel Stacks in Bethlehem. This year will be the Zuke 500's debut at the confluence of the Delaware and Lehigh Rivers. Unlike the Watermelon Shot-put competition (that's a story for another day!), the Zuke 500 has become a beloved signature event for EFM. We really hope you'll join us this Saturday!

Where: By the Scott Park Stage
When: Registration and car building 9am - 10:30 am. RACE TIME: 11:00 am sharp
Details: $10 registration fee* includes: zucchini of your choice (three classes: sports car, mid-size, and monster truck), one set of wheels and axles, access to car building supplies, and our expert pit crew, and a collectible race medallion necklace.
*We have a select number of zucchini 500 scholarships for those unable to afford the $10 fee.
Prizes: awarded for fastest car in each category, and the most creative car in each category. We will also have an adults only (ages 16 and older) race following the kiddos.

Cabbage Throw Farm is racing into the weekend with a truckload of zucchini! A lot of other summer crops have taken off too including eggplant, cucumbers, shishito peppers (yum!), and heirloom tomatoes. Looking for a summer squash you won’t find just anywhere? Cabbage Throw Farm will be bringing a few more of the Sicilian squash, Cucuzza! It has a slightly sweet and nutty flavor and can be prepared just like zucchini!
This weekend, you will also find lettuce, green beans, kale, chard, escarole, fennel, cabbage, kohlrabi, purple top turnips, cherry tomatoes, beets, carrots, onions, garlic, shallots, herbs and more.

Nothing says summer better than field-grown Jersey Tomatoes, and Phillips Farms has them! Corn will be available again this week and all summer long. Phillips Farms is your one-stop shopping for all your favorite summer produce, so don’t forget the Peaches, Cantaloupe, Blueberries, Blackberries and Plums. What's NEW at Scholl's? White nectarines, that's what! ... Sweet, fragrant, juicy and oh so delicious! And on the veggie side, three varieties of gorgeous eggplant come on board this week.
Yellow and white peaches and plums are plentiful. And they're still picking those luscious cherries. Sweet cherries for eating, and sour cherries for pies and cobblers - yum! Tomatoes, bell peppers, pickles, string beans and zucchini are also available, along with broccoli, cabbage, cauliflower and cukes! Ohh, and the season's first HOT peppers!

The summer flowers are officially bursting at Holy Cow Farm, and that includes these luscious snapdragons. They'll be featured in bouquets and will be available as bunches in one of four colors; peach, lavender, purple, and red. And if you have kiddos, be sure to ask farmer Bryan how to make your snapdragons "talk"! It's also the last week of the blue spiky echinops flowers featured last week. This week Zekraft will be offering eight different grab and go salads. Look for Roasted Vegetable (with zucchini in honor of the Zucchini 500), Peach with Spiced Pecans, Strawberry with Roasted Chicken; a Cici Salad - roasted chickpeas with sun-dried tomatoes, capers, and artichoke hearts; their Beet Salad with local goat cheese; Tropical Shrimp (market manager's fave), Thai Peanut and Mediterranean Chicken.
The soup du jour is Roasted Tomato and Basil. And this week's Crostini is a Chicken Salad with grapes walnuts and bleu cheese; and an olive Tapenade.
The dessert trifecta includes Pot de Creme, Banana Pudding and Key Lime Pie... mmm! Oh, and stop by and meet Shianne, Zekraft’s latest hire.

White Currant & Prosecco Gelatin

You know when you are shopping at the Farmers' Market and something catches your eye and before you know it, you’ve bought some fruit that you’re not even sure you can identify, much less cook with? Yeah, me too, ha! Recently, these beautiful white currants* sparkled at me and I couldn’t resist taking them home. After researching a bit, I decided that I didn’t want to make the traditional white currant jelly called Bar-Le-Duc (look it up, it involves de-seeding with goose quills!) and instead went with a quicker gelatin dessert. I had agar powder in the pantry, which is a good vegan substitute for unflavored gelatin. It’s easy to scale this recipe, 1/2 tsp of agar powder will gel 1/2 cup of liquid, so if you only have 1 cup of Prosecco in your fridge, you can still have a fancy dessert!
1 cup Prosecco or white grape juice
2 Tbsp sugar (more or less to taste)
1 tsp agar powder
about 1/2 cup white currants, de-stemmed
In a small saucepan, stir together the Prosecco or juice, sugar and agar powder and bring it to a boil. Reduce the heat and simmer for 5 minutes so that the sugar and agar are completely dissolved. Pour into molds or small glasses, and add the currants (they will float). Cool on the counter for 15 minutes, then refrigerate to fully set. Serves 2. *You'll find currants at Phillips Farm
