☀️ There's just something about a burger in the summer that makes it feel like summer!
When I was a little girl back in Thunder Bay, I remember my dad BBQ-ing his homemade version (ground beef only, and salt and pepper - no spices at all) in the middle of an open flame 🔥 that was really, really high, and turning it over with an oven mitt. All inside our garage with the door open. True story!
He liked them a little charred - and I didn't know any different - so I ate them that way too.
Over the years I've welcomed burgers back into my life (charred-free), and have experimented with a variety of recipes with the goal of making a healthy, but delicious version, including the toppings.

Instead of a bun, I serve on slices of sweet potato and top with homemade guacamole (you can use store-bought), pickles, a teaspoon of mayo, and a dollop of ketchup.
Even though my burgers are very different now from when I was a kid, each time I make them, I can't help but smile, thinking of dad, the large flame, and his oven mitt! 😊
