We are already in the middle of the year and life keeps changing as rapidly as the Sahara Desert Dust. Perhaps in the silence brought on during the lockdown, we managed to search deep into ourselves to discover who we are and how to be better as husbands, wives, daughters, sons, sisters, brothers, employees, employers, and friends. In looking at the glass half full, if we can walk away from this difficult time being stronger and better, it was worth the time. But alas, June brings us some hope and good news coming from our Jewel that you will learn in this newsletter. There is good news around the world too so let’s enjoy life and all the blessings we have!
A huge highlight for June is Father's Day and we thank Fathers for all they do. The family unit functions wonderfully thanks to all our good Fathers and Mothers.
To help us celebrate, why not do it with food! So, with lobster season in full swing, we dedicate this month to a scrumptious classic, Lobster Thermidor seasoned with cayenne pepper, lemon juice, and grated cheese. To complement this delicacy there is nothing better to wash it down with than Belizean Rum Punch made with your favorite Belizean rum, in the “Recipe of the Month” section so check it out and cheers to love, health, and life!

To ensure the safety of our Belizean visitors and staff, the Consulate of Belize in Florida remains closed for consular services. In the recent weeks, Florida is experiencing an increase in COVID-19 cases but as soon as this changes and we are comfortable with the safety of all, we will let you know about plans to reopen. In the interim, please feel free to call or email us with any questions. All email addresses and phone numbers of the Embassy, Honorary Consulates, and Consulates are provided in this edition and can be found under the "Directory of Consular Offices in the US" for your convenience.

Dear Members of the Belizean Community,
We take this opportunity to remind everyone in our community to please stay safe and to take all necessary measures requested by health experts and health authorities to mitigate the potential of infection from the dreaded coronavirus. In so doing we shall, as best as we can, safeguard the well being of family members and by extension members of our community.
The Embassy of Belize in Washington DC and the Consular Offices in Miami, New York, Los Angeles, and Chicago have been looking closely at the COVID-19 related situation in the United States and we continue to perceive a worrying situation especially given the spiking of cases now being experienced.
We had intended and prepared to reopen consular services in the coming weeks, but unfortunately, the reality now staring us in the face compels us to take a decision that safeguards our staff and ultimately the community we serve. Hence we are unable, at this point, to announce an opening of consular services. We shall continue to watch the situation closely with a view to reopen as soon as it is safe to do so.
We will continue, through this medium as well as social media, to inform you of the potential for re-opening of consular services.
Again, we beg that you stay safe and wish you well in all your endeavors.

Cadex Herrera

Cadex Herrera was born in the Cayo District in Belize and grew up less than a mile from Xunantunich. It was in this Mayan site that Herrera’s love and admiration for art originated just as his dream to one day become an artist. Soon, Herrera started to teach himself to make art and his perseverance led him to the College of Visual Arts, in St. Paul, Minnesota. There, he graduated with a bachelor’s in Communication Design and taught Media Arts at Creative Arts high school for 13 years.

Herrera’s passion for art soon opened the doors for him to teach summer photography classes at Central high school, Video Production and Photography at Film North Minnesota, art classes for local boy scout troops, and night classes for adult learners. He is currently the Intervention Specialist of the St. Paul Public Schools and assists students with behavioral issues through his restorative approach with art.

Many of Herrera’s pieces live temporarily as salt on black paper, line art on a dry erase board, or watercolors between glass; as well as short animations and photographic series to bring awareness of the need to protect the environment. During the past years, he has pushed himself to create art that brings awareness of humanitarian, social, and environmental injustices like his most current mural in honor of George Floyd in Minnesota.

The Consulate of Belize in Florida sadly announces the death of Mr. Marek Wojcik and
extends its sincerest condolences to his
family and to his colleagues at the MIA Protocol Office who dearly loved him.
Mr. Marek Wojcik was a friend of Belize while diligently working as a protocol officer at the Miami International Airport assisting many Belizean Officials with care during their travels.
We will miss his kindness, humor, quick wit and warm smile. May he rest in eternal peace.

Lobster is a must-have dish in Belize, especially in June when the famous Lobster Fest is on. This celebration started back in 1994 by the Islanders Veterans Football Club of Caye Caulker. Lobster themed events, pageants, and parties were also held in San Pedro and Placencia. Locals and tourists can be sure to have a blast!

Belizean Lobster Thermidor
|
|
|
Ingredients:
- 3 to 4 medium to large lobster or crawfish tails
- 4 tbsps. butter
- 1 tsp. grated onion
- 4 tbsps. flour
- 1 cup sliced mushrooms
- 1 tsp. dry mustard
- 1 1/2 cups evaporated milk
- 1 tsp. celery salt
- 1/2 cup buttered crumbs
- 1 cup full cream
- 1 egg yolk (slightly beaten)
- 3-4 tbsps. sherry
- 1 1/2 cups grated cheese
- pinch of cayenne pepper
- 1 tbsp. lemon juice
- 1 1/2 tsp. salt

|
Preparation:
- Boil lobster, keeping shells whole.
- Remove meat, and cut into small pieces.
- Heat butter, add onion and mushrooms, and cook over low heat until soft, but not browned.
- Stir in flour. Slowly add milk and cook, stirring constantly, over low heat until thickened.
- Add cream and seasoning.
- Stir a little of the hot sauce into the slightly beaten egg yolk, stir into remaining sauce.
- Add cheese and stir over low heat until cheese is melted.
- Add sherry, lemon juice, and lobster meat.
- Pile into shells, top with buttered crumbs.
- Bake at 375°F until browned.

Ingredients:
- 2 cups of Belizean white rum
- 1 cup of Belizean coconut rum
- 2.5 cups of fresh orange juice, pineapple juice and lime juice
- Optional: 3 tbsp of grenadine (or enough to make the punch into a pretty pink color)
|
|
Preparation:
- Simply stir all the ingredients together in a pitcher or punch bowl, and chill before serving.
- Use short rocks glasses full of ice, and garnish with slices of orange and pineapple or cherries.
- This recipe yields 8-10 servings.
|

Extension of the time-limits for the filing of the initial pleadings

THE HAGUE, 24 April 2020.
By an Order dated 22 April 2020, the International Court of Justice (ICJ), the principal judicial organ of the United Nations, extended from 8 June 2020 to 8 December 2020 and from 8 June 2021 to 8 June 2022 the respective time-limits for the filing of the Memorial of the Republic of Guatemala and the Counter-Memorial of Belize in the case concerning Guatemala’s Territorial, Insular and Maritime Claim (Guatemala/Belize).
