We Have Aubergine!
We have WHAT? Aubergine or eggplant, whichever you might call it - they are both the same, and are a species of nightshade grown for its edible fruit. Botanically, eggplant is a berry, just like blueberry, watermelon, or tomatoes. In the culinary world, it's a vegetable, as it is used in main dishes and not eaten for sweetness. There are 25 calories in 100 grams (3.5 ounces) of eggplant. It is composed of 92% water, 6% carbohydrates, 1% protein, and negligible fat. The plant originated in India and cultivated in India and China for more than 1,500 years.
Several of our growers have Aubergine,
so be sure to shop the whole market
for the variety you crave!

Yes Virginia, we have red potatoes at the Mississippi Farmers Market!
August 19th is National Potato Day
Last week we talked about the culinary method of Julienne, and as such we spotlighted the delicious sweet potato. Since August 19th is National Potato Day, how about we celebrate the versatile red potato!
Round reds are often referred to as "new potatoes," but the term "new" technically refers to any type of potato that is harvested before reaching maturity. Because of their waxy texture, the flesh of red potatoes stay firm throughout the cooking process, whether they are being roasted or cooked in a stew. The flavor of the red potato is subtly sweet with a mild and medium sugar content.
Roast, mash, incorporate into soups, stews or salads, the red potato is a versatile and delicious vegetable.
