Recipe: Grilled Asparagus and Veggie Orzo Pasta Salad by Kim Herlache

Salad Ingredients

  • 2 bunches asparagus
  • EVOO, such as Olivelle Frantoia EVOO
  • Kosher salt and pepper
  • 16 oz orzo
  • 3T Olivelle's Caramelized Garlic olive oil
  • 2 cups feta cheese crumbled
  • 2 orange or yellow bell peppers, diced (tiny)
  • 1 1/2 cups pitted sliced kalamata olives
  • 1 bunch green onions, chopped
  • 2 cups grape tomatoes, quartered

Dressing Ingredients

  • 1/2 cup fresh lime juice
  • 2 tablespoons white barrel aged balsamic--Meyer Lemon
  • 1T minced garlic
  • 3t oregano
  • 2t Dijon mustard
  • 2t cumin
  • 1T raw honey
  • 1 cup olive oil

Equipment Needed and Available at Cornucopia

  • RSVP sink colander
  • RSVP stainless steel measuring cups and spoons
  • Kyocera tomato knife--amazing!
  • chef n lime juicer
  • GIR whisk
  • Le Creuset stockpot
  • OXO 16" locking tongs for grilling
  • Nordicware sheet pan
  • Epicurean cutting board
  • Kuhn Rikon garlic press
  • Le Creuset stainless steel bowl

Directions

Grill the asparagus

  1. Wash and snap off ends of asparagus.
  2. Place asparagus in large sheet pan. I like Nordicware’s high-sided sheet cake pan 17” x 12” x 2”.
  3. Drizzle EVOO, such as Olivelle Frantoia EVOO. Sprinkle kosher salt and grind fresh pepper on top and toss. I like to toss with my hands and make sure that the seasoning and oil hits all of the asparagus.
  4. Grill asparagus until tender 10 – 15 minutes. Grilling is the best, but if you don’t have access to a grill you may use the oven and roast the asparagus at 400 degrees for 20 minutes.
  5. Set aside and cool.
  6. Once cool, cut into 1”- 2” pieces.

Cook the orzo

  1. Cook orzo in large pot of boiling salted water until tender but still firm.
  2. Drain & rinse with cold water.
  3. Transfer to a large bowl and toss with 3 T. olive oil, such as Olivelle's Caramelized Garlic olive oil.

Make the Salad

  1. Combine all dressing ingredients; whisk in bowl, season with salt and pepper.
  2. Add dressing and remaining salad ingredients to the orzo.
  3. Toss gently and serve at room temperature.

Tips

  • Prepare the orzo and dressing the day ahead. Keep separated until the day of serving.
  • Fresh basil is a nice touch on top.
  • Olivelle Frantoia and Caramelized Garlic olive oil (both available at Cornucopia) add an extra boost of flavor to the recipe. Regular olive oil (or less expensive canola oil) can also be used.
