Salad Days at the Market
The Mississippi Farmers Market will have plenty of produce to make any variation of Garden Salad one could want. Create a Salad of your very own and share it with us on Social Media!
It's National Eggplant Month
Why is it called eggplant? Well, back in the 1700's, early European versions of eggplant were smaller and yellow or white. They looked like goose or chicken eggs which led to the name "eggplant."
Most of us are familiar with eggplant that are large and dark purple, but the shape, size and color can vary from small and oblong to long and thin, and from shades of purple
to white and green.
There are more ways to prepare an eggplant than can be imagined. Pick some up at the Mississippi Farmers Market this week and try out
a few of these recipes.
