Vendor Spotlight: Wooden Art In Honor of International Day of Forests
|
|
World War II-era Polish-American novelist
Jerzy Kosiński said, "The principles of true art is not to portray, but to evoke."
In honor of International Day of Forests, which is on Thursday, March 21, 2019, we are acknowledging artisan Charles Smith of Brandon, MS, whose wooden pieces evoke many thoughts and emotions. You can find Smith at the Mississippi Farmers Market on Saturdays displaying his one-of-a-kind, wooden art pieces. The name of his business is Use Me. Stop by and thank him for making such beautiful art in our state for us to adore and enjoy in our homes, offices, and any place that has space for a bold, artistic statement.

Peppers & Broccoli
Sauté
Serves 4
Active Time: 30 min
-1 tablespoon sea salt for blanching water
-1 large bunch broccoli (1 1/2 lbs) – florets cut in 1 1/2″ pieces (6 cups)
-1/4 cup extra virgin olive oil
-1/8 teaspoon ground cayenne
-2 medium red bell peppers – halved, seeded, and cut lengthwise in 1/4″ strips
-1 medium yellow bell pepper – halved, seeded, and cut lengthwise in 1/4″ strips
-6 garlic cloves – skinned and very finely sliced
-1/2 teaspoon sea salt
Instructions:
1. In a large pot, bring 6 quarts of water to a boil. Fill a large bowl with cold water and several ice cubes. Set aside. When the water is boiling, add the salt and broccoli. With the back of a spoon, push the broccoli down so that all the florets are submerged in the boiling water. Blanch for 2 minutes, the florets will turn bright green. Drain and transfer to the iced water bath. When the broccoli is totally cooled (this will take only a few seconds), drain and set on paper towels to remove any excess water.
Cook’s note: The broccoli can be blanched up to 1 day ahead. Refrigerate in a sealed container or plastic bag until ready to use.
2. Heat a
large non-stick, heavy-bottomed skillet
over high heat. Add the olive oil and cayenne and stir well. Add the peppers and sauté for 6 to 8 minutes until the peppers are golden-brown, tossing only occasionally. If the peppers start cooking too quickly, reduce the heat to medium-high. Drizzle the vinegar over the peppers and shake the pan vigorously for a few seconds (The vinegar will evaporate almost instantly as the pan is quite hot by now). Add the garlic, toss well, and sauté for 30 seconds. Add the broccoli and sprinkle the salt over the vegetables. Sauté for 1 minute until the broccoli is warmed through, tossing constantly. Transfer to a serving platter and serve immediately.

7 Popular Cooking Techniques to Try this Spring with Your Farmers Market Veggies
|
|
1: Baking: a method of
cooking
food that uses
prolonged dry heat
, normally in an
oven
.
2: Grilling: to cook with
direct dry heat
applied to the surface of food, usually from above or below.
3: Steaming: to cook while
boiling water
continuously, causing it to vaporize into steam; the steam then carries heat to the nearby food, thus cooking the food. The food is kept separate from the boiling water but has direct contact with the steam, resulting in a moist texture to the food.
4: Roasting: a cooking method that uses
dry heat
where hot air envelops the food, cooking it evenly on all sides with temperatures of at least 300 °F from an open flame,
oven
, or other heat source.
5: Frying: the cooking of food in oil or another fat.
6: Stir Frying: a cooking method in which ingredients are fried in a
small amount
of very hot oil while being stirred in a wok
7: Sautéing: to fry
quickly
in a little hot fat.

Benefits of Buying Food from the Farmers Market
- You can easily locate foods of different colors from all five food groups of a healthy diet, as illustrated by the United States Department of Agriculture's My Plate nutritional guide, at the Market. The five healthy food groups are: fruits, vegetables, protein, grains, and dairy.
- Since the foods do not have to travel too far to get to the market, the shelf life is longer in your pantry or fridge.
- Vendors can sometimes offer tips and recommendations about their products.
- Preparing foods at home can be a healthier alternative and very cost-effective.
- Farmers markets are a great family-friendly environment for people of all ages. The Mississippi Farmers Market has clean indoor restrooms with changing stations for babies. When you get hungry or thirsty, the Farmer's Table is a great place to stop and grab a bite to eat; it is located right inside the Market. The restaurant even sells some Mississippi-grown and Mississippi-raised products as well!
