Different Types of Squash You Can Find
at the Market This Week
The Mississippi Farmers Market has a variety of squash types. Their different colors, sizes, and shapes greet happy shoppers as they peruse their produce options and mingle with their friends and the vendors. Here are some delicious squash varieties available at the Market right now that will leave your taste buds smiling:
  1. Yellow squash: the squash type that most people think of when they hear the term squash; similar in size and weight as a cucumber but has a curved end. It has many varieties itself.
  2. Zucchini: of all squash varieties, it is the one that most resembles a cucumber in size and shape.
  3. Patty pan squash: a small squash with a round, shallow shape, and scalloped edges.
Introduce Your Taste Buds to This Stuffed Zucchini with Cheesy Roasted Red Peppers
A summer squash, zucchini can surprisingly reach up to over 3 feet in length. However, it is usually harvested while still immature (at about 6 to 10 inches in length). Appearing as dark or light green or as a gold hybrid, zucchini makes a great color complement to any meal, and various types and colors can be combined to make one dish.

Since zucchini is commonly cooked and presented as a savory dish or accompaniment, here is a stuffed zucchini recipe that is bound to make you go back to the kitchen for seconds!

Preparation Time
PREP: 5 mins
COOK: 25 mins
TOTAL: 30 mins

Ingredients
  • 2 medium zucchini (about 1 pound)*
  • 1 tablespoon olive oil
  • Salt and fresh ground black pepper
  • 1/4 cup (3 ounces) ricotta cheese
  • 2 tablespoons shredded Parmesan cheese
  • 1/2 cup (2 ounces) shredded mozzarella cheese
  • 1 roasted red pepper from a jar of roasted peppers
  • Handful of torn fresh basil leaves*

*Available at the Mississippi Farmers Marke t

Instructions
  1. Heat the oven to 425 degrees Fahrenheit. Line a baking sheet with a silicone baking mat, aluminum foil, or parchment paper.
  2. Cut the zucchini in half, lengthwise. Use a spoon to scoop out a channel down the middle of each zucchini half, making boats.
  3. Rub the zucchini with the olive oil and a generous pinch of salt. Place the zucchini halves, cut-side-down, onto the prepared baking sheet. Roast for about 12 minutes or until the zucchini is tender, but not soft.
  4. Meanwhile, chop the roasted red pepper into small pieces. Then, in a small bowl, mix the peppers with the ricotta and Parmesan cheese.
  5. Flip the zucchini so that they are cut-side-up and divide the ricotta-pepper mixture between the zucchini boats. Sprinkle mozzarella on top then place the zucchini back into the oven and bake for another 8 to 10 minutes, until the cheese melts and the zucchini is soft. For some browned cheesy spots, before taking the baking sheet out of the oven, turn the oven to broil and broil until the cheese bubbles and browns, an additional 1 to 2 minutes.
  6. Serve with basil and a bit of fresh ground black pepper scattered on top.
