Quark - the German Cheese You've Never Heard Of

Germans love their quark -- a soured milk, fresh, unaged cheese (also referred to as a curd) product, not dissimilar to crème fraîche, though quark is drained afterward. Quark is eaten on bread, in dips, as a kind of yogurt substitute, and even used in baking. Perhaps most famously in Quarkkuchen, a German version of cheesecake. If your New Year's resolutions include baking more German delicacies, you'll want to try out the recipe linked below!
