Recipe: Rhubarb Custard Pie

Ingredients
- Pie crust for 2 deep dish pies
- Use your favorite recipe or cheat and get the premade ones from the grocery store
- 8 cups chopped rhubarb
- 9 eggs
- 3 T flour
- 3 cups sugar
- Dash of salt
- A little milk
Equipment Available at Cornucopia
- Pie dish--Emile Henry or Le Creuset
- Pie crust shield
- Pie drip shield
- Measuring spoons--RSVP
- Measuring cups--RSVP
- Knife--Wusthof, Shun, Cangshan
- Batter bowl--Mason Cash or Anchor
- Whisk--GIR ultimate whisk
- Cutting board--Epicurean

Directions

Arrange each unbaked crust in a deep dish pie dish.
- Place 4 cups of cut rhubarb into each of the unbaked pie shells.
- Whisk together eggs, flour, sugar, salt and milk in batter bowl.

Pour half of the egg mixture in each pie dish over cut rhubarb.
- Place pie drip shield under pie dish in case of spill over and bake at 425 degrees for 10-15 minutes or until edges start to brown.
- Place pie crust shield on edges and reduce temperature to 350 degrees for around 45 minutes or until rhubarb is tender.
