Every Kid Healthy Week, April 22-26
|
|
Well, Spring Break has zoomed by, and Easter break is officially over. Pretty soon, it will be time for the kids to enjoy a long, relaxing summer break. Since parents will be responsible for providing more meals for their kids when school is out, it is essential for parents to provide nutritious, balanced meals during this time. The meats, fruits, and vegetables that your children will need are conveniently available at the Mississippi Farmers Market every Saturday. You can easily restock every week or stock up in one trip if the amount of space in your fridge and pantry allows you to do so.
The last day for Jackson Public Schools will be Friday, May 24, which will be a 60% day. If your child attends a school in another school district, make sure to confirm the student's last day. This will help ensure that you make proper arrangements for your child's being out of school for this longer period of time. Make a list of of all the healthy snacks, fruits and vegetables, and dairy products your child likes to eat. Make your Mississippi Farmers Market list accordingly.

How to Enhance Your Pig-in-a-Blanket this Spring
|
|
Although pigs-in-a-blanket are a popular hit among young kids, adults enjoy them as well. They are quick, simple, and affordable to make. You can incorporate your Livingston Springs Farm grass-fed pork sausages from the Mississippi Farmers Market to make them. You can receive a 10% discount on cut purchases weighing 20 lbs or more. Pork can be sold by the whole and half. (In addition to selling their meats by the cut, they also sell beef by the whole, half, and quarter; lamb by the whole and half.)
Wednesday, April 24 was National Pig in a Blanket Day, and in honor of this day, we will list a few new ways you can enhance the flavor of this appetizer the next time you prepare some:
Basic Ingredients:
Livingston Spring Sausages (sliced to the size and shape you desire)
2 packages crescent rolls
Basic Instructions:
Preheat oven to 375 degrees.
Open each can of biscuits. Before unrolling, cut each roll into 1" pieces. Unroll each piece and cut into 4 strips.
Roll dough around each sausage, pinch to seal closed and place seam side down on a pan.
Bake 12-14 minutes or until browned. Serve warm
Now, to add a "kick" to your pigs in a blanket, try one of these:
- Dip in honey or syrup while eating
- Add cheddar cheese
- Add chili and cheese
- Add garlic and parsley to the crescent rolls before baking
- Add caramelized onions
- Use spicy sausages
- Wrap bacon around the sausage
- Butter your crescent rolls
- Use breakfast sausage
- Add a variety of diced veggies inside the blanket

Mississippi Snow Peas: A Popular Hit
|
|
Snow peas are very popular legume in Mississippi. They are typically eaten whole in its pod while still unripe. This vegetable has been cultivated since the 19th century in Europe. Snow peas get their name from their capability of withstanding frost and snow, growing in open fields even during the winter.
According to a Healthline newsletter issue (2018), this are the nutritional profile of what a 3.5-ounce (100-gram) serving of snow peas provides:
- Calories: 42
- Carbs: 7.5 grams
- Fiber: 2.6 grams
- Protein: 2.8 grams
- Vitamin A: 22% of the Daily Value (DV)
- Vitamin C: 100% of the DV
- Vitamin K: 31% of the DV
Meanwhile, be sure to grab a few pounds of snow peas this Saturday at the Mississippi Farmers Market. The High Heeled Hippie will have some for sale. They are definitely worth a try! You can incorporate them into so many different recipes or simply make them a dish on their own!
