What's happening this week:

It Labor Day weekend this weekend and is seems to me that this used to be a much busier holiday back when school would start that following week. Now, with all that this kids have going on already a few weeks into the school year it seems harder to celebrate, but if you do, we will be here for you all weekend. We will be closed on Monday 9/5 in honor of the holiday but we will make sure we have plenty of options on Friday, Saturday and Sunday for you!!

As a reminder we will be CLOSED on Monday September 5th in honor of Labor Day.

Beef, it's what's for dinner, at least that is if you are buying the sale items in Western Springs this week. With all that has been going on with beef prices these days, you should take advantage while you can.

First up this week is the Sirloin Tri Tips. This is one of most butcher's favorite cuts because it is versatile, tender and flavorful. You can grill it whole, roast it in the oven and finish it on the stovetop or it can be cut up for just about any recipe that calls for a tender cut of meat.

Also this week we have the Caribbean Jerk Hanging Tender. The Hanging Tender is a cut that is similar in texture as a skirt steak but it is a little more tender and about half the price so that gives it the edge in my house and to make it even better the Caribbean Jerk Marinade is out of this world!!! These are simply grilled over a high heat for about 7-8 minutes per side depending on the thickness.

Blackened America's Cut Pork Chops

We have a repeat item to start out the meat sales at Mike's. The Sirloin Tri Tip is our first item and it will be on sale at both locations. If you want to see what drivel I wrote about the Tri Tip this week, see the Western Springs sale section but I did search out a few more recipe ideas for the oven, the grill and even to make shish kabobs at home with your Tri Tip!

For the second item this week we have an absolute customer favorite, the Blackened America's Cut Pork Chops. This is an item that I hear about all the time from people that I don't know when they find out I work at Mike's. Once time I was buying a car and a salesman overheard me talking about Mike's and he brought up these chops. As he was singing their praises, out came a mechanic that also overheard and then I was talking about Blackened Pork Chops for the rest of the night. I even had to go back the next day to finish the paperwork because we talked pork chops so long! Just grill these chops over a medium heat for about 5-6 minutes per side and you will enjoy them so much will be talking about these with your mechanic too!
