A Mixologist and Registered Dietitian Answer an Age-Old Question: What Are Bitters?
By Natalie Arroyo Camacho, Well + Good
Here's a riddle for you: What do old fashioneds, Manhattans, Aperol spritzes, and negronis all have in common—other than being alcoholic cocktails, of course? The answer? Bitters. “Through a bitter, you can bring a lot of different flavors to a cocktail, which helps elevate them to have more complexity and more dimensions than they would have with just spirits, sugar, or sodas,” says Brian Cummins, a chemical engineer, mixologist, and the founder of Great Northern Distilling in Stevens Point, Wisconsin.
Similar to how chefs season meats and veggies with salt, pepper, and other spices, mixologists use bitters to “season” beverages.

Ice Age Trail receives National Park Service unit status
By Juliana Tornabene, WMTV, December 7, 2023
Wisconsin’s Ice Age Trail will now be recognized as a unit of the National Park System, officials announced on Thursday.
The Ice Age Trail and North Country Scenic Trail were both given the status change, which provide them with improved management resources and access to federal funds. They will also be included on official National Park Service maps.
Executive Director and CEO of the Ice Age Trail Alliance Luke Kloberdanz described it as a momentous moment.
“Unit status gives the Trail, and its volunteers, the recognition it duly deserves,” Kloberdanz stated. “Make no mistake: the Ice Age Trail is world-class and the number of hours Alliance volunteers devote to it consistently rank among the top in all the National Park Service.”
The Ice Age Trail stretches nearly 1,200 miles in Wisconsin, consisting of rolling hills, lakes, ridges and river valleys. Around 2.3 million people were estimated to have visited the trail annually, according to a 2019 study, and that number is expected to have increased.

'Best news we could have gotten': City leaders react to train development
By Jon Erickson, NBC 26, December 7, 2023 (Map provided by Amtrak Connects Us)
There has not been passenger train service to northeast Wisconsin in more than 50 years, but history might come full circle.
A train from Chicago that currently makes a final stop in Milwaukee, could be extended north to make stops in Fond du Lac, Oshkosh, and Appleton before making a final stop in Green Bay if the idea becomes reality. It is a possibility NBC 26 has reported on since January.
The federal government has awarded $500,000 for planning for the route as part of the Corridor ID program, according to Democratic U.S. Senator Tammy Baldwin.
