The goals of the class were to help our clients learn about balanced nutrition, discover easy meal prepping tips, and get practical shopping advice – plus, the added bonus of hands-on fun along the way. Under the guidance of Hopkins’ volunteers, our veterans paired off and worked together to prepare chicken salad and vegetable-bean salad — recipes that could be prepared in bulk at the beginning of the week and provide a nutritious meal, snack, or side to last for days. The recipes required no complex cooking skills or special equipment and were rich in protein and whole grains.
“These recipes are all healthy and affordable,” explained Anahita Nimbalkar, who helped organize and lead the workshop. “They use canned products, pantry staples, and fresh vegetables, and they’re packed with nutrients.”
Before stepping into the kitchen, clients learned about healthy eating habits and nutrition basics, like good sources of protein, reading nutrition labels, and affordable shopping tips. It was an invaluable opportunity to ask questions, debunk diet myths, and arm themselves with tools for an independent, healthy lifestyle.
The true highlight, though, was the opportunity to put their skills to the test in the kitchen before sitting down to enjoy the food they prepared. For some, it was an educational adventure, for others, a chance to step back into their happy place. “This is what I love to do,” said Julio, a client at The Baltimore Station. “I’ve always loved to cook. When I’m at home I’m always cooking and trying new recipes, so this is awesome.”
A huge thank you to Hopkins HOME for this fantastic opportunity for our veterans to get in the kitchen and learn some new recipes.
