Beets are one of the sweetest vegetables and one of the deepest in color! They do have the highest sugar content of any vegetable, but here is where we sometimes mistake their sugar content and sweetness as not only high in calories but containing too much sugar. So, let's take a closer look at this wonderful deep red veggie.
The Beet Scoop…
Beets are low in calories even though these calories come from carbohydrates. Because of their quickly absorbed form of sugar (known as a high glycemic index), people with diabetes do need to be more cautious when eating them and more importantly when drinking beet juice. For most of us, if we remember that our body needs sugar for energy, our brain runs on energy, and if the food is loaded with other nutrients, then we have a healthy food.
