Happy Retirement to Jeff Coppersmith!

Thank you for your 51 years of service. 

In appreciation for many years of service and dedication the Coppersmith family celebrated Jeff Coppersmith and his retirement on July 9, 2024.

A wonderful outdoor venue was created adjacent to our Los Angeles office To share in the celebration, Jeff's family and industry friends were in attendance.

"The day before the 4th of July holiday, we received an urgent email from a concerned Chief Operating Officer understanding the timeframe, as storage charges at the airport started the same day. The clearance was for eight rolls of linen fabrics, on the spot. This is one of the commodities we have never cleared in DFW. Xena immediately took charge and was able to get this new customer to complete all Coppersmith's forms, key entry, make multi agencies aware of this shipment, uploaded files, took payment and completed Customs clearance before DFW Customs closed at 1530. 

This was released and saved the new customer hundreds of dollars in airline storage fees alone. Because of this kind of take-charge employee, we have a customer for life!"

Welcome to the new series from Andrea King in LAX!
Each month in "King's Kitchen" Andrea will present her favorite recipes for royally delicious dishes that would be fit for a king. Fabulous flavors, food with flair, crazy good, simplicity at its best...something to suit every taste...you will be sure to find the variety that spices your life.

When you go to the Farmer’s Market and buy waaaaay too many tomatoes…You make Bruschetta.



This Heirloom Tomato Bruschetta tastes of summer! A simple process of tossing chopped tomatoes with salt will remove excess water and intensify their flavor. These are then tossed with homemade garlic oil, fresh basil and serve on grilled or toasted bread.

Heirloom Tomato Bruschetta

Ingredients :


2 pounds heirloom tomatoes, cored and diced

· 1 teaspoon kosher salt, plus more for seasoning

· 4 cloves fresh garlic, peeled and minced

· 1/3 cup extra virgin olive oil

· 20 medium basil leaves, stacked, rolled and thinly sliced

· olive oil spray, or olive oil

· 1 loaf crusty bread, grilled or toasted in oven

Instructions:



MAKE THE TOMATO TOPPING:


Place chopped tomatoes in a large colander set into a bowl or sink. Season with salt and gently toss. Let this sit for 2 hours or up to over night, tossing occasionally. (the longer the better)

Save the tomato liquids to make a vinaigrette or discard.

Meanwhile add minced garlic to a small sauté pan with the olive oil. Heat on low, stirring occasionally until the garlic has softened and is fragrant. Remove and let cool completely.

Once the tomatoes have sat, transfer to a bowl, pour in garlic oil and slice and add the basil. Toss, taste and season with more salt if desired.


Make The Bread:

Slice bread and drizzle with olive oil or spray with olive oil spray. Grill bread or toast in a 400° oven until golden, about 8 minutes.


You can serve the heirloom tomato topping in a bowl alongside the grilled or toasted bread and spoon desired amount onto each piece or prepare each slice with equal amounts of the tomato bruschetta and arrange onto a platter
