Keeping on with your IDDSI Learning…
The IDDSI Academy has been hard at work piloting, reviewing, finalizing and testing the online IDDSI Academy course for wider access to the global community. Our goal is to ensure the finished education product will offer the user a seamless experience from registration, through completion of the modules, and receipt of the completion certificate.
We are grateful to all those who participated in the initial Academy pilots and provided excellent feedback to help develop IDDSI education that will meet the needs of our global community.
We hope to launch the online IDDSI academy course later this year, so stay tuned…

Festival IDDSI – Latinoamérica
On May 18, 2026 in collaboration with the IV Latin American Congress on Dysphagia, IDDSI celebrated its first educational international event in Latin America. The event took place in Cancún, México on the Universidad Anáhuac campus. Some of the program highlights included:
- Discussions around implementation in the different countries of Latin America;
- Testing methods practice and advice on texture modification by Chef Jorge (Argentina IRG);
- Understanding the benefits of using IDDSI in the pediatric dysphagia practice (invited speaker Dr. Memorie Gosa);
- How IDDSI facilitates our work with persons with head/neck cancer (invited speaker Dr. Mario A. Landera);
| | The day included many discussions and much sharing on how to continue to promote the use of the IDDSI framework in Latin America. | | |
We could not have done this without an incredible group of volunteers, led by IDDSI Co-Chair Luis F. Riquelme, from various IRGs in Latin America: Chef Jorge Díaz (Argentina), Aline Ferla (Brazil), Ma Laura Ferreira (Argentina), Pia Gallardo Astorga (México), Fabiane Garcia (Brazil), Angélica Lizarazo (Colombia), María Laura Mooney (Argentina), Graciela Moscardi (Argentina), Rosa M. Sampallo Pedroza (Colombia), Patricia Tabacco (Argentina), Valeria Ton (Argentina).
“Muchísimas gracias” to all…

Israel: As part of an applied food science laboratory course in the undergraduate Nutritional Sciences program at Ariel University, led by Dr. Michal Efrat and supported by Dr. Danyel Chermon, students developed innovative recipes aligned with the IDDSI framework, focusing on Levels 5 and 6. The project combined culinary creativity with clinical precision, adapting traditional recipes into dysphagia-safe formats while preserving sensory appeal and nutritional quality.
Featured dishes included soft oat and banana mini pancakes with apple purée, high-protein yogurt, and strawberry sauce (Level 6), as well as tofu Bolognese with small pasta (ptitim) modified to meet Level 5 requirements.
| | Students completed the full product development process, from concept creation to prototype testing, addressing challenges such as particle size, texture stability, and cohesiveness. Final dishes were evaluated in a “MasterChef”- style format by academic staff and external examiners from the Israeli Ministry of Health Nutrition Division, based on texture compliance, taste, and presentation. Students also presented nutritional analyses, technological considerations, and recommendations for serving, storage, and packaging. | | |
Portugal: IDDSI@SPoDDis2026
Many thanks to the SPoDDis2026 planning team for inviting Peter Lam, IDDSI CEO, to present the closing keynote presentation at the Portuguese Dysphagia Society 2026 congress and organizing an Introduction to IDDSI & Culinary Challenge workshop. It’s amazing to see how the Francesina sandwich, a local favourite, modified to a Level 5 Minced & Moist texture! Judges, including a patient with dysphagia and his wife, provided feedback to the competing teams.
