Homemade Caramel Apple Recipe

Ingredients

  • 8 small or medium apples
  • 8 wooden sticks
  • 2 cups granulated sugar
  • 1 cup butter (2 sticks)
  • 1 cup heavy whipping cream, warmed
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. Prepare the apples. Wash and dry the apples thoroughly. Insert a wooden stick into the stem end of each apple. Line a baking sheet with greased parchment paper.
  2. Make the caramel. In a heavy saucepan, combine the sugar, corn syrup, and butter. Heat over medium heat, stirring until the butter melts. Slowly stir in the warm cream, being careful as the mixture bubbles.
  3. Cook until ready. Continue cooking, stirring frequently, until the caramel reaches 245–248°F on a candy thermometer.
  4. Add flavor. Remove from the heat and stir in the vanilla and salt. Let cool for 5–10 minutes, until thick enough to coat the apples.
  5. Dip the apples. Dip each apple into the caramel, turning to coat completely. Let the excess drip off, then place on the prepared baking sheet.
  6. Let them set. Allow the caramel to firm up for 30–60 minutes. Add chopped nuts or sprinkles before the caramel sets, if desired.

Tips for Success: Make sure the apples are completely dry so the caramel sticks properly. A candy thermometer helps ensure the caramel reaches the right consistency. Store finished apples in the refrigerator and enjoy within 3–4 days.
