NATIONAL STUFFING DAY
November 21st is an ideal day for National Stuffing Day with Thanksgiving right around the corner. Since we are already thinking about the delicious turkey stuffing that is a traditional part of Thanksgiving dinner.
Some cooks choose to stuff the bird with crusts of bread, vegetables, herbs, and spices. Others prefer to prepare a similar dish alongside the turkey using the drippings to moisten the dish. Either way, each preparation is a personal preference or family tradition. The difference is the first is called a stuffing, but the latter is referred to as a dressing.
The usual turkey stuffing consists of bread cubes or crumbs combined with onions, celery, salt, and pepper. Further spices and herbs such as summer savory, sage, or poultry seasoning add flavor and variety. Other recipes add sausage, hamburger, tofu, oysters, egg, rice, apple, raisins, or other dried fruits.
The first known documented stuffing recipes appeared in the Roman cookbook, Apicius “De Re Coquinaria.” Most of the stuffing recipes in this cookbook included vegetables, herbs and spices, nuts, and spelt (an old cereal). Some recipes also included chopped liver and other organ meat.
In addition to stuffing the body cavity of poultry and fish, various cuts of meat are often stuffed once deboned and creating a pouch or cutting a slit in them. A few examples of other meats frequently stuffed include pork chops, meatloaf, meatballs, chicken breast, lamb chops, and beef tenderloin.
Stuffing isn't limited to the butcher block. Vegetables are excellent containers for stuffing. Peppers, tomatoes, zucchini, and cabbage are just a few of the shapely veggies that make stuffing a fabulous part of your meals.

Tech giant's plan for huge Louisiana facility clears initial hurdle. Concerns raised over power needs.
BY JOSIE ABUGOV

A multibillion-dollar data center being proposed for northern Louisiana by Meta, Facebook's parent company, cleared a first hurdle before state electricity regulators on Wednesday, with proponents calling it an economic shot in the arm for an area badly in need, though others warned over its massive power demands.
The advance of AI is causing demand to skyrocket for data centers that form the backbone of the technology, but the airport-sized computer warehouses can also strain local grids.
Entergy is asking state regulators at the Public Service Commission to approve construction of three new gas power plants at a cost of at least $3.2 billion, in addition to other generation resources. The facility could account for around 30 percent of Entergy’s power in Louisiana, state officials said, though the utility stresses the plants will be set up for clean energy production when it becomes feasible in the future.
The commission discussed Entergy’s request for the first time on Wednesday, and the agency moved quickly to hire an outside law firm and consultant group to review the application. Entergy wants the proposal reviewed by October 2025, which the hired experts noted is an expedited timeline for such a large project.
“The customer has expressed a need to get this done quickly, to get this data center to market very quickly,” said Dana Shelton, lead counsel with the law firm hired by the commission.
Commissioners voiced support for the project, stressing the jobs and economic transformation it could bring to an area that has long struggled with high rates of poverty.
“We’re tickled to death that it’s coming to northeast Louisiana, a place where we need it more than any place in Louisiana,” said Commissioner Foster Campbell, who represents the area where the facility would be located.
But some cautioned against a review process that they say could prioritize speed over depth.
What does Entergy want?
The three power plants, along with a new transmission line and other grid updates, would deliver a total of 2,262 megawatts. The data center would also need additional generation for the facility, Entergy filings to the commission show, spelling out another 1,500 megawatts of solar power.
For scale, Entergy's New Orleans Power Station generates up to 128 megawatts of electricity, which is enough to power around 80,000 homes.
Meta’s data center is expected to sit on over 2,250 acres of agricultural land off La. 183 near the small community of Holly Ridge in Richland Parish, about 30 miles east of Monroe. Two of the three proposed power plants would be located nearby at a site called Franklin Farms, formerly envisioned as an auto plant.
The $5 billion project is intended to employ 300 to 500 people with an average salary of $82,000, according to filings to the Public Service Commission from Entergy. In Richland Parish, where around 20,000 people live, the average per capita income was around $25,000, according to the U.S. Census.
Entergy said in its filings that "the effects from such a massive infusion of financial and human capital will undoubtedly be transformative."
The PSC agreed on Wednesday to allocate up to around $1.5 million for the two hired firms, which will work with the state officials and a slew of intervening environmental, nonprofit and utility groups. Some of these organizations have raised concerns over the project’s massive energy consumption, reliance on fossil fuels and the effects the data center could have on ratepayers.
The Alliance for Affordable Energy, one of the intervening groups, questioned whether ratepayers could bear unnecessary costs of the gas plants down the line.
Entergy’s filings stress that the company would cover a large portion of the costs, such as a monthly charge for 15 years for the full annual required revenue of the power plants. But such plants can have a lifespan of 30 to 40 years.
“If this company is only in Louisiana for 15 years, that means that there’s a cliff, that all other ratepayers would have to pay sometime in the future,” said Logan Burke, the alliance's executive director.
‘Every voice is heard’
Entergy filings to the commission include various goals for incorporating renewable energy into the project, such as nuclear, carbon capture and wind.
For instance, the proposal says that all of the plants will be capable of 30% hydrogen co-firing — a mix of the cleaner hydrogen with another source, like gas — and will have the capability of 100% hydrogen firing at some point in the future. It also says the company will contribute money to a carbon capture project in Lake Charles, and that Entergy has committed to work with the company on a wind project, and to notify the tech giant on nuclear opportunities.
Jessica Hendricks, the alliance's state policy director, pointed out that those clean energy options would only occur in the future.
PSC Commissioner Davante Lewis emphasized the importance of a comprehensive review process. He has raised concerns over the shortened intervention period in the case and the directive to approve the proposal in ten months.
“My support and trust in you is that we make sure every voice is heard,” he said to the hired experts. “We don’t let time get in the way of a thorough review.”

NATIONAL GINGERBREAD COOKIE DAY
National Gingerbread Cookie Day on November 21st encourages us to grab the rolling pin and cookie cutters. The baking will warm the home and decorating will inspire us to design tasty cookies while making memories!
National Gingerbread Day takes place on June 5th. A favorite food of an Armenian monk, Gregory of Nicopolis, brought gingerbread to Europe around 992 AD and taught French Christians to bake it. Gingerbread was often used in religious ceremonies and was baked to be sturdy as it was usually molded into images of saints.
Gingerbread cookies also make sturdy walls for sweet houses and the day is just in time for some practice before National Gingerbread House Day on December 12th. Don't forget to make those tasty gingerbread families that can be decorated by the children in your home.

Found in the icy waters of the Arctic and subarctic ocean, bowhead whales are considered the longest-living whales—which also makes them the longest-living mammals. They can live for over 200 years, and they don't become sexually mature until around age 25. | |

November 21st Celebrated History
1783
Brothers Jacques-Étienne and Joseph-Michel Montgolfier launched Dr. Jean-François Pilâtre de Rozier and François Laurent up in the first successful untethered hot-air balloon flight. The brothers' cloth balloon took their passengers aloft 5.5 miles over Paris. Can you imagine the view?
1902
The Philadelphia Athletics squared off against the Kanaweola Athletic Club at the Maple Avenue Driving Park in Elmira, New York, for the first-ever professional football night game. The final score was 39-0 in favor of the Philadelphia Athletics. We wonder how many fans stayed for the whole game.
1905
Albert Einstein publishes a paper in the journal Annalen der Physik that leads to his mass-energy equivalence formula, E=mc²
1922
The first woman appointed to Senator takes the oath of office. On October 3, 1922, Rebecca Latimer Felton was appointed by the Georgia governor to fill a vacancy. She served only 24 hours while the Senate was in session, as Democrat Walter George was elected shortly before the next session was convened.
November 21st Celebrated Birthdays
Hetty Green - 1834
From a young age, Green's shrewd understanding of money earned her a ruthless reputation in the world of finance. After the death of her husband Edward Henry Green in 1902, she earned the nickname "Witch of Wall Street" after appearing in her mourning clothes. She died one of the richest women in the world.
Dorothy "Mickey" Maguire - 1918
As a catcher, Mickey played seven seasons in the All American Girls Professional Baseball League. During her career, she played on two World Champion teams.
Georgia Frontiere - 1927
In 1979, Frontiere became 70% owner of the Los Angeles Rams. She was the second woman in NFL history with majority ownership of a team.
Etta Zuber Falconer - 1933
As one of the few African American women with a Ph.D. in mathematics, Falconer set out to change that. She established several science programs designed to encourage women to continue their educations in math and sciences. Well before STEAM and STEM programs, Falconer knew math and science were important to our future.
Henry Hartsfield - 1933
As a NASA astronaut, Hartsfield flew on three shuttle missions including as the commander of the space shuttle Discovery's maiden voyage. He also logged a total of 483 hours in space. Do you wonder what that translates to in travel miles?
Ken Griffey, Jr. - 1969
The left-handed center fielder played 22 years in Major League Baseball. He was known for his exceptional hitting ability as well as his solid fielding.

1878 Streetcars on Canal Street
I have probably posted this photograph before but it is one of my favorites, showing Mardi Gras in full swing on Canal Street, crammed with mule-drawn streetcars surrounding the statue of Henry Clay (removed to Lafayette Square in 1900). In the right background you will notice the roof of the Belknap Fountain which was installed in 1871. This photograph was taken by J.S. McClure.

Swirl Wine Bar & Market
3143 Ponce de Leon Street
FNWS
At that stroke of midnight on November 21, 2024, oenophiles all over France will begin their jubilant celebration in honor of the end of the harvest and the uncorking of the Beaujolais Nouveau. Hundreds of events throughout France will be held with fireworks, music, and, of course, tastings, as “tout le monde” vie to sample the current batch of Beaujolais Nouveau - light, fruit-driven wines made with barely fermented Gamay grapes that are best consumed as soon as possible - literally. But, never fear, there are 3 different quality levels of Beaujolais above Nouveau and these are the ones we get excited about!
The entry-level wines that are simply labeled Beaujolais, are made from grapes grown throughout the Beaujolais region, mainly in the south. These also tend to be on the fruit-forward side and are meant to be enjoyed in the first year or two after the vintage. Beaujolais-Villages wines are based on Gamay grapes that were grown in the northern part of the Beaujolais region, specifically 38 permitted villages. And Cru Beaujolais are grown in any of ten specific northern locales whose typically granitic soils (though they are far from uniform in composition and character) can produce the most age-worthy and complex of all red wines from Beaujolais. So, needless to say, the least expensive wines generally come from the south, and the more expensive and age-worthy wines come from the north. And if this was all you learned about Beaujolais, you’d know enough to dive in and start learning by tasting - but as always goes with wine, a lot of the fun is in the details.
We are here to help with those details as we taste different wines from the 3 categories and talk about the terroir that makes them special. What is Beaujolais Blanc? What is the difference between a village-level wine and a cru? What's the stylistic difference between one Cru and another?? David Sobiesk will present as we learn about one of our favorite regions and pick out some of the best wines ever to pair with your holiday meals! The event is sold out but you can join our waitlist here, Gamay
Learn a little, drink a little, and have some fun with us!

Join the award-winning (1st place, baby!) NOLA Jitterbugs for a 6-week series with live music in the last class!
Our live music classes with local musicians and culture bearers, as well as our overall emphasis on music appreciation is what makes our lessons stand out among the rest!
Starts at The Contemporary Arts Center!
6-7pm Intro to Swing
For total beginners to swing dancing or dancing of any kind. Also for those looking to refresh their basics and learn some ragtime dances. We use these pre-swing era dances to teach beginners how to step on rhythm, step on rhythm while connected to another person, how to connect in order to lead or follow, you'll learn to syncopate your footwork, and then we'll slowly start to let go of one hand and create the beginnings of what will eventually be a bad-ass swing out.
7:30-8:30 Lindy Hop Vocab - Intermediate Level
This class is gonna give you some must know moves, some technique, some philosophy, and of course, we'll continue to clarify and polish up your swing outs.
No partner required to take either of these classes. Come alone or with friends!

Comedy House New Orleans
The most unique comedy show in New Orleans is The Open Mic From Hell, hosted by Chris Trew (as seen on MTV, Comedy Central, America's Got Talent)
CHNO ( Comedy house New Orleans)
609-610 Fulton St
New Orleans, LA 70130
Mon,November 25
8:00 pm - 10:00 pm
(Entry at 7:30 pm)
The Open Mic From Hell is the most unique night of comedy in New Orleans.
Everything about the show is chaotic and unpredictable in the most beautifully hilarious way.
The list of performers? A total mystery.
The jokes they’ll tell? Nobody knows, not even them.
How does it work? Comedians sign-up on the list an hour before showtime. At least 13 names get pulled out of the bucket.
When a name gets pulled they come on stage and make a choice - do they do an entirely new set based on words from the audience, or a special challenge set.
Past challenges have had comics doing their set outside on the street, with noise canceling headphones on, and with a designated heckler in the crowd. We are always adding new, improved, and ridiculous challenges to the show.

Super Bowl LIX may happen more than three weeks before Fat Tuesday, but the host committee wants to make sure the city -- and the throngs of visitors in town for the NFL's championship game -- get the carnival experience.
The day before the game, February 8, there will be a Mardi Gras-style parade complete with elaborate floats, marching bands, and throws.
Our partners at NOLA.com report details of the parade are still being finalized, but float-builder Barry Kern says it will likely be a 20-float parade made up of signature floats from various krewes.
And because it is not an official carnival parade, corporate sponsors will also be a part of it.
Todd Graves, founder of Baton Rouge-based Raising Cane's Chicken Fingers, will serve as grand marshal.
Rather than follow one of the traditional Mardi Gras routes, the Super Bowl parade will line up on Elysian Fields in the Marigny, parade up Decatur Street along the French Quarter, then take Tchoupitoulas St. to Poydras, turn up to St. Charles Ave., then proceed along St. Charles to St. Joseph St. just before reaching Harmony Circle.

Just two days after Super Bowl LIX, Jefferson Parish will celebrate its 200th birthday on Feb. 11. Bicentennial festivities kicked off at the State of Jefferson address Tuesday with the unveiling of the official poster, depicting a pelican before the Mississippi River in vivid pink and blue hues. It is illustrated by Louisiana artist Becky Fos, known for designing the 2023 state "I Voted" sticker, modeled after the Louisiana state flag.
A limited supply of signed and numbered posters can be purchased for $150, with proceeds going toward the Jefferson Community Foundation.
Courtesy of Jefferson Parish
The parish will celebrate the bicentennial on Feb. 11 with a Light the Night event, followed by a community-wide king cake party at Lakeside Mall on Feb. 15.
The following month, a bicentennial-themed Senior Expo will take place at the Alario Center on March 20, and a "Park to Park" 10K run will happen March 22 at Lafreniere Park.
Festivities for the parish's 200th birthday will come to a close June 14 with the Bicentennial Ball at Lakeside Mall, hosted by the Jefferson Community Foundation. Lee Sheng said she wanted parish events to involve the entire community and asked residents and local business owners to get involved.
"I want our bicentennial to feel like everybody's a part of it," Lee Sheng said in her address.
