Happenings at the Farm

Consider the following:

In Turkey, the daily onion intake is 4 times as high as in the United States.

In Turkey, the probability of hip fracture is 4 times lower than in the United States.

Coincidence? Maybe, but studies are showing more and more nutritional powers associated with your everyday yellow onion. A study on rats revealed that the rats whose ovaries were removed and fed onions daily lost the least amount of bone - and less bone resorption occurred the greater the amount of onions! Their bone structure also improved.1 In another study it was found that the fiber found in onions - fructan - is used by the gut to create short-chain fatty acids that stimulate calcium absorption and help with bone mineralization. Of all vegetables tested (primarily on rats, alas), the onion comes out on top for helping to preserve bones the best. Broccoli is another contender while many herbs may have even greater protective effects. Those would be sage, rosemary, thyme and parsley. To date, however, only onions and tomatoes have been tested in humans, and both have been found to have beneficial effects on bone less reduction and improved bone density. So if you're looking for natural foods to help sustain your bones, keep your (cryin') eyes on that everyday onion!

It may have been raining, but the field crew brought in a nice harvest of broccoli along with a smattering of cauliflower. Zucchini will be retiring soon, but we still have a stash for the weekend. Corn and green beans are on a hiatus, but many late summer crops have extended well into the fall now. We'll have a new crop of red Cornitos peppers, along with more shishitos, jalapenos and poblanos. You'll find another big burst of cherry tomatoes and large juicy jicama.

As an addition to our Cuyama Orchards' apples, Gold Rush and Arkansas Black apples arrived this week from Cirone Farms in See Canyon. Arkansas Black are crisp and densely textured with flavor that begins tart and sweetens as they age. Gold Rush descends from Golden Delicious apples and has a "rush" of flavor in its crisp bite. Some describe flavor notes of cider and spice. Berries will be very limited this weekend, but you can still find Murcott mandarins, passionfruit, and pineapple guava. Looking forward to seeing you soon!

Recipes

Sautéed Cabbage and Apples

Ingredients:

  • 3 slices of bacon
  • 1 apple, peeled, cored, and diced (tart apple preferred)
  • 1 cup beef stock (or chicken, or vegetable)
  • 1 medium head Napa cabbage, cored and sliced thin
  • ½ cup shallot, thinly sliced
  • 1 yellow onion, thinly sliced (approximately 1 cup)
  • 2 tablespoons garlic, thinly sliced (approximately 2 large garlic cloves)
  • 2 teaspoons kosher salt
  • 1 tablespoon cider vinegar (Bragg’s brand preferred)

Directions:

  1. Heat a large, heavy-bottomed sauté pan over medium-high heat. Add the bacon and cook until crisp. Reserve the fat in the pan and remove the bacon.
  2. Add the onion and a pinch of salt. Cook for 3 minutes, then add the shallot. Cook another 3 minutes, stirring. Add the cabbage and 2 teaspoon salt. Sauté for 5 minutes, stirring occasionally. Add the garlic and cook for another 2-3 minutes, stirring constantly so the garlic does not burn.
  3. Add the beef stock, cover the pan, and reduce the heat to low. Simmer for 35 minutes.
  4. Remove the cover and add the apples and cider vinegar. Stir to incorporate. Cover and cook another 10-12 minutes or until the apples soften.
  5. Remove the lid and turn the heat to high. When the liquid has evaporated, turn the heat to medium-high and sauté the cabbage, stirring frequently.
  6. Serve hot.

Enhance the flavors with these optional ingredients:

Spices: Add a teaspoon of caraway seeds, cumin, pepper flakes, or paprika for depth of flavor.

Topping: Fried cabbage with apples loves sour cream. Add a pinch of cayenne pepper with the sour cream for balanced flavors.
